Cherry Texas Sheet Cake
Well, well, well. Cherry Texas Sheet Cake. Let that sink in. This amazing cake is one of the moistest, most mouthwatering cakes ever! It’s also really easy to toss together. The cake uses only three ingredients. The cream cheese icing uses only a handful more. The combination is sensational to say the least. On top of that, this is truly a Texas-sized cake! 🙂

Our neighbors across the street had a baby the third week of September. I offered to bring them a meal and they gladly accepted. I brought over a Tortellini Marinara, Broccoli Au Gratin, Corn Pudding (one of the first recipes I ever collected), some of our favorite home-baked bread and this scrumptious dessert. They loved everything.
Because this cake makes 48 servings, I gave our neighbors half and stashed the rest of it in the freezer to hand out to other friends. The only thing “difficult” about this recipe is finding the cherry cake mix. Certain Walmarts have them in our area. But as we get closer to the holidays they are a little easier to locate.
Cherry Texas Sheet Cake will have you salivating from the first bite. It’s a delicious dessert to feed a crowd. If you’re a cherry lover, this cake is everything you’ve ever wanted in a dessert. 🙂
Cherry Texas Sheet Cake is absolutely scrumptious.
This mouthwatering dessert is great for potlucks, company or holidays because it feeds a crowd.
I thought this cake was irresistible. Our neighbors concurred.
Here’s what I did.
I used these ingredients for the cake.
Pour cherry cake mix into a bowl. Add eggs.
Whisk or stir to combine.
Add cherry pie filling.
Stir to combine.
Spread cake mixture into a greased 12×17″ cookie sheet.
Bake at 350 degrees for 30-40 minutes or until a toothpick inserted in center comes out clean. Cool cake completely before adding icing.
I used these ingredients for the icing.
Soften butter and cream cheese. Add vanilla, cherry extract and red food coloring.
Mix with an electric mixer until creamy.
Add powdered sugar one cup at a time mixing well after each addition.
Add powdered sugar and mix until no lumps remain.
Spread cream cheese icing over top of cooled cake. Garnish with maraschino cherries and mint, if desired. Refrigerate for a few hours before serving.
Slice and serve!
Cherry Texas Sheet Cake is moist and delicious.
This cake really pops in flavor since it has cherry extract in the icing and cherry pie filling in the cake.

Cherry Texas Sheet Cake
Equipment
- 1 11x17" jelly roll pan
- 1 large mixing bowl
- 1 wooden spoon
- 1 small mixing bowl
- 1 electric mixer
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
CAKE:
- 15.25 oz. box Betty Crocker Cherry Chip Cake Mix
- 4 large eggs
- 22 oz. can cherry pie filling
CREAM CHEESE ICING:
- 8 oz. pkg. cream cheese softened
- 1 tbsp. vanilla extract
- 1 tsp. cherry extract
- 1 cup unsalted butter softened (2 sticks)
- 4 cups powdered sugar
- 3 drops red food coloring as desired
- 10 maraschino cherries and fresh mint as desired, for garnish
Instructions
CAKE:
- Mix together cake mix and eggs.
- Fold in the pie filling.
- Spread into a greased 11x17” jelly roll pan.
- Bake at 350 degrees for 30-40 minutes, or until a toothpick inserted in center comes out clean.
- Cool completely before adding icing.
CREAM CHEESE ICING:
- In a small bowl, beat cream cheese, vanilla and cherry extracts, food coloring and butter with an electric mixer.
- Add powdered sugar a cup at a time, beating after each addition.
- Beat until smooth.
- Spread over top of cooled cake.
- Garnish with maraschino cherries, if desired.
- Refrigerate before serving.

Hello, could you please offer me a recipe for creating the cake from scratch? I can’t locate certain cake mixes in India other than chocolate and vanilla. Thank you.

I would consider doing this: do you have internet access? Go to Taste of Home, All Recipes or some other good online cookbook database. Find a recipe for a plain yellow or white cake batter. Use that plus the other ingredients in the recipe. Since you will probably already add eggs in making the batter, eliminate the eggs and just add cherry pie filling to thew homemade white or yellow cake mix. If you can’t find cherry pie filling, you will need to make that from scratch too. Hope this helps.

Hi is it possible for you to give a recipe for making the cake from scratch as I can’t find specific cake mixes in the U.K. except for chocolate and vanilla. Thank you.

Hi, Helen. I would use your vanilla cake mix with the cherry pie filling and eggs. If possible, I would add a little cherry extract to give it a little more pop. You could also add some finely chopped dried cherries if desired. But I think this would still taste pretty good with simply a vanilla cake mix.

Hi, I am looking at all of your cherry recipes, yum, yum. What other cake mix can you use instead of cherry chip cake mix, I have been looking for this cake mix for a long time with no luck. We love anything cherry flavored. Also, if I use a different cake mix, what can I use to really give it a robust cherry flavor? Thank you for your suggestions. God bless you.

Hi, Betty. You can start with a white cake mix. I would add a teaspoon of cherry extract, and perhaps a half cup of finely diced dried cherries. That should provide plenty of robust flavor.
