Turkey Taco Salad

Turkey Taco Salad is fantastic. This is a healthier, lower calorie version of Taco Salad that you will simply love. I started with turkey sausage for the meat. Then I added my Homemade Taco Seasoning to the meat. Toss in lettuce, tomatoes, kidney beans, olives, corn, cucumbers, bell peppers, Fiesta Mexican cheese and tortilla chips and you have a match made in heaven. 🙂

We put our house up for sale during the holidays and I was trying to clear out my pantry of excess stuff. Olives, kidney beans, corn and turkey sausage were used to great effect to accomplish that goal! This recipe makes a lot, so it’s perfect for company. Especially if you’re trying to keep your house cool during the hot, summer months. I served it for lunch and found it simply wonderful.
The turkey sausage provides just the right amount of heat if you’re a Tex-Mex fan. This salad is crunchy, healthy and pretty much irresistible. It doesn’t hurt that turkey is a lot lower in calories than ground beef either. Give Turkey Taco Salad a try and you’ll be smacking your lips just like I did. Hearty, satisfying, filling, worth making again and again.
Turkey Taco Salad is magnifient!
This salad is terrific with either French or Catalina salad dressing or Ranch dressing.
Turkey Taco Salad is a healthy, gluten free option with a nice kick to it.
Here’s the recipe.
I used these ingredients. The small bowl contains Homemade Taco Seasoning.
Fry turkey sausage and drain any grease.
Add Homemade Taco Seasoning or a taco seasoning packet.
Stir to combine; set aside.
Place lettuce in a large salad bowl. Add olives, green bell pepper, cucumbers, grape tomato halves, corn, kidney beans, Mexican cheese and cooked turkey sausage.
Toss salad and place on plates. Add salad dressing to serve.
Turkey Taco Salad is a great entree for lunches or for dinner during the summer when you want recipes that don’t heat up your kitchen.
Turkey Taco Salad has just the right amount of heat. It’s also great served with a slice of cornbread.

Turkey Taco Salad
Equipment
- 1 large salad bowl with tongs
- 1 sharp knife to cut vegetables
- 1 large skillet
- 1 hamburger chopper to cut meat down in small pieces while frying
- measuring cups
- measuring spoons
- 1 spatula
- 1 wooden spoon
Ingredients
- 1 lb. Jennie-O turkey sausage
- 1 pkt. taco seasoning or Homemade Taco Seasoning
- 30 oz. pkg. classic Romaine salad (three 10-ounce packages)
- 1 cup grape tomatoes halved
- 1 large cucumber sliced and quartered
- 1 large green bell pepper diced
- 15.5 oz. can dark red kidney beans rinsed and drained well
- 5 oz. green salad olives sliced
- 7.75 oz. can whole kernel corn drained (half of a 15.25-oz. can)
- 4 oz. pkg. Mexican blend cheese shredded
Instructions
- Layer lettuce, tomatoes, cucumber, bell pepper, kidney beans, olives and corn in a large salad bowl.
- Meanwhile, fry turkey sausage until cooked thoroughly.
- Use a hamburger chopper to cut meat down in small pieces while frying.
- Add taco seasoning and stir well to combine.
- Heap turkey sausage over top of salad.
- Serve with Ranch, Catalina or French dressing.
