Christmas Cookie Extravaganza – 2021
I loved, loved, loved, these fabulous Ginger Meltaways, They’re filled with crystalized ginger! They also include vanilla chips so they have a soft texture with a tiny, little crunch. Amazing. These delightful cookies made our Christmas giving list this year and they were a wonderful addition.

I received a box of assorted candied fruits from Paradise Fruit Company to try out in new recipes. I have been working my way through the box and wondered what I could do with the crystalized ginger. I decided to try a new twist on my Melt-In-Your-Mouth Cookies. I chopped the ginger into smaller pieces. Then I added vanilla chips to increase the flavor. I can’t tell you how delicious these cookies turned out. I gave one to my neighbor when we were out talking in the back yard. She loved it. So did I!
Don’t be afraid to try these jewels. The ginger does not overwhelm the cookie. It adds a very pleasant taste and texture to a melt-in-your-mouth sugar cookie. I hope you give these a try because everyone’s gonna want seconds!

Crystalized Ginger makes these cookies pop with flavor!
Every mouthful had me drooling.
These holiday cookies are wonderful for a Christmas Cookie Exchange or any holiday party.
Here’s what I did.
I used these ingredients.
Soften butter. Add granulated sugar, powdered sugar, eggs, baking soda, salt, cream of tartar, vanilla extract and oil.
Mix with an electric mixer until thoroughly combined.
Chop ginger into smaller pieces.
Add UNBLEACHED all-purpose flour. (Bleached flour toughens baked goods). Add vanilla chips and crystalized ginger.
Stir well to combine.
Roll mixture into balls and place on greased cookie sheets. Refrigerate about one hour before baking. Bake at 350 degrees for about 12-14 minutes or until done.
Every bite was so wonderful. These cookies are soft and chewy, not hard or crunchy.
Ginger Meltaways were fantastic. Thankfully, I packed up most of these for friends, otherwise I would have eaten them all!

Ginger Meltaways are wonderful with a tall glass of milk!

GINGER MELTAWAYS

Ginger Meltaways
Equipment
- 4 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 spatula
- 1 sharp knife to chop crystalized ginger into tiny pieces
Ingredients
- 1 cup unsalted butter softened
- 1 cup canola oil or use coconut oil or avocado oil
- 2 large eggs
- 1 tsp. real vanilla extract
- 1 cup granulated sugar
- 1 cup powdered sugar
- 1 tsp. sea salt
- 1 tsp. cream of tartar
- 1 tsp. baking soda
- 5 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 8 oz. container Paradise crystalized ginger chopped
- 12 oz. pkg. vanilla chips or white baking chips
Instructions
- Mix butter, oil, eggs, vanilla, sugars, salt, cream of tartar, and baking soda with an electric mixer until smooth.
- Stir in flour, crystalized ginger, and vanilla chips with a wooden spoon.
- Stir thoroughly until very well combined; this may take 4-5 minutes.
- Roll dough into balls and place on cookie sheets sprayed with cooking spray.
- Chill cookie sheets with cookie dough in refrigerator one hour.
- Bake at 350° for about 12-14 minutes or until done.
- Rotate cookie sheets on racks every six minutes of baking time.
- Cool completely.
