Cauliflower Au Gratin
Cauliflower Au Gratin is a wonderful side dish for the holidays. This incredibly easy 4-ingredient recipe is perfect for holiday meals especially if you have to whip something up quickly or at the last moment. This one includes Ritz crackers for a topping, and cheddar cheese as part of the easy, creamy, cheesy part that holds the casserole together.

I didn’t grow up eating cauliflower. My mom never made it (probably because my Dad was such a picky eater). Also, it was the mid-sixties before you could get frozen vegetables in our home town. I didn’t eat much cauliflower until after I’d been out on my own and married. I think the first time I actually ate it was when my mother-in-law served it for a meal around 1980. I loved it and starting using it in recipes after that.
Cauliflower Au Gratin is one of the easiest ways to use cauliflower in a side dish. If you need to make this in a slow cooker because you have too many things in the oven, I believe it can be easily converted. I would mix the first three ingredients and slow cook until the cauliflower is tender. Then sprinkle the Ritz cracker crumbs over top and cook about 30 minutes longer.

Cauliflower Au Gratin is a really scrumptious side dish.
This is terrific for holiday meals like Thanksgiving or Christmas.
It’s really hard to beat a four-ingredient recipe!
Here’s what I did.
I used these ingredients.
Cook cauliflower according to package directions. Drain.
Add cream of chicken soup.
Add shredded Cheddar Cheese.
Stir ingredients to combine and spread into a greased 9×13″ glass baking dish.
Sprinkle crushed Ritz cracker crumbs over top.
Bake casserole at 350 degrees for 30-40 minutes until crumbs are lightly browned and contents of casserole start bubbling.
Cauliflower with cheese is amazing.
Cauliflower Au Gratin is marvelous for company because it yields 15 servings!
I made it for a potluck dinner, but also served it with meatloaf and sweet potatoes.

Cauliflower Au Gratin
Equipment
- 1 9x13" glass baking dish or 3-quart casserole dish
- 1 large mixing bowl
- 1 wooden spoon
- measuring cups
- 1 microwave oven
- 1 Rolling Pin to crush crackers (or crush crackers in your hands)
Ingredients
- 48 oz. frozen cauliflower florets (3 pounds)
- 10-3/4 oz. can condensed cream of chicken soup undiluted
- 2 cups cheddar cheese shredded
- 1 cup Ritz crackers crushed
Instructions
- Microwave cauliflower in microwave oven according to package directions; drain.
- Pour cooked cauliflower into a large mixing bowl.
- Add soup and cheese and stir to combine.
- Pour into a greased 3-quart baking dish.
- Sprinkle crushed Ritz crackers over top.
- Bake about 30-40 minutes at 350°, or until casserole is cooked through and crackers are lightly browned on top.

Cauliflower Au Gratin can really be paired with almost any main dish entree. It was wonderful with BBQ Meatloaf and Candied Sweet Potatoes.
