Christmas Cookie Extravaganza – 2021
Green Cherry Cookies are utterly delightful. These delicious cookies include green rather than red cherries, pecans and coconut. They are absolutely perfect for holiday baking, Christmas Cookie Exchanges or other holiday parties. On top of that, these festive cookies are hard to stay out of!

Paradise Fruit Company sent me a box of assorted candied fruits and asked me to blog about them. I made 10-15 different recipes with all the different candied fruits they sent. I ended up making these cookies and some sweet rolls with the green cherries. We loved them.
Green cherries are marvelous for holiday baking since the colors blend so well with the holiday theme. If you want a treasured cookie to bake for the holidays this year, Green Cherry Cookies should be at the top of your list!

Green Cherries, pecans and coconut come together marvelously in these holiday cookies.
Little bits of green cherries fill these amazing cookies.
Here’s what I did.
I used these ingredients.
Here are the green cherries from Paradise.
Soften butter. Add sugar, brown sugar, vanilla, egg, salt, baking powder, baking soda and milk or half-and-half.
Mix with an electric mixer until thoroughly combined.
Add UNBLEACHED all-purpose flour (bleached flour toughens baked goods), add coconut, pecans and candied green cherries.
Stir well to combine.
Roll mixture into balls and place on greased baking sheets. I had to keep my hands moist while rolling.
Bake at 350 degrees for 12-15 minutes. Rotate cookie sheets on racks every six minutes.
Every bite will have you drooling.

GREEN CHERRY COOKIES
(My own concoction)
Green Cherry Cookies
Equipment
- 1 18x26" cookie sheet pan
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 sharp knife to chop green cherries
- 1 spatula
- measuring cups
- measuring spoons
- 1 nut chopper if nuts are not previously chopped
Ingredients
- 1 cup light brown sugar packed
- 1/2 cup granulated sugar
- 3/4 cup unsalted butter softened (1 1/2 sticks)
- 1 large egg
- 2 tbsp. half-and-half or milk
- 1 tsp. vanilla extract
- 2 cups UNBLEACHED all-purpose flour (Bleached flour toughens baked goods)
- 1/2 tsp. sea salt
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 8 oz. container Paradise candied green cherries chopped
- 1 cup coconut
- 1 cup pecans chopped (measure after chopping)
Instructions
- In a large mixing bowl, cream brown sugar, granulated sugar, butter, egg, milk, vanilla, salt, baking powder and baking soda with an electric mixer until smooth and creamy.
- Fold in flour, green cherries, pecans and coconut with a wooden spoon.
- Roll mixture into balls and place onto baking sheets sprayed with cooking spray.
- (I kept my hands moist while rolling).
- Bake at 350° for 12-15 minutes or until golden brown.
- Rotate cookie sheets on racks after 7 minutes of baking time.
- Cool completely.

These look great but I don’t understand exactly what you mean by “rotate cookie sheets on racks”

Hi Claire. You move the bottom rack of cookies up to the top rack and the top rack of cookies to the bottom rack. Hope that helps.
