Monster Brownies
Happy St. Patrick’s Day everyone! Get out your green. 🙂 I have a fantastic dessert for you today. Monster Brownies are the best! These monster-sized bar-type cookies are filled with all of your favorite things. M&Ms, peanut butter, chocolate chips, oatmeal, peanuts and white chocolate chips. They’re excellent to take to tailgating parties or to watch your kids at baseball or soccer practice. Since they have two kinds of peanuts and three kinds of chocolate, they are a force to be reckoned with. 🙂

I have a Monster Cookies recipe I’ve used for decades. Those cookies use butterscotch chips but no chocolate. While they taste great, I wanted to make some goodies with chocolate instead. I decided to remake the recipe with regular semi-sweet chocolate chips and white chocolate chips. Wow, just wow!
I had a gal from our church contact me a few weeks ago and ask me if I was interested in making cookies for a retreat they were having. I ended up making these goodies along with some Peanut Butter Surprises, Perfect Chocolate Chip Cookies and three kinds of sweet rolls. They all loved the cookies and she told me everyone gained about 5 pounds that weekend. 🙂
Monster Brownies do better in a regular baking pan or dish rather than being baked on a cookie sheet. They’re better if they’re plumper and thicker – more like real brownies. If you need an M&M or chocolate fix, these fantastic brownies will do it for you!
Monster Brownies are delightful!
These chunky brownies are filled with M&Ms, chocolate and white chocolate chips, peanuts, oatmeal and peanut butter.
We loved the way these brownies turned out.
These lovely brownies will satisfy any chocolate craving.
Here’s what I did.
I used these ingredients.
Soften butter. Add sugar, brown sugar, eggs, peanut butter, baking soda and vanilla.
Mix ingredients with an electric mixer until smooth.
Add UNBLEACHED flour. Bleached flour toughens baked goods. Add oatmeal, peanuts, half of the M&Ms, chocolate chips and white chocolate chips.
Stir with a very heavy spoon until ingredients are completely combined. Stir, stir, stir!
Spread and pat ingredients into a greased 10×15″ baking dish.
Sprinkle remaining M&Ms over top.
Bake at 350 degrees for 25-30 minutes until set.
Monster Brownies are terrific for any kind of holiday baking too.
Monster Brownies are thick and chewy.

MONSTER BROWNIES
(Recipe inspired from my Monster Cookies recipe)
Monster Brownies
Equipment
- 1 10x15" glass baking dish
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
- 1 cup creamy peanut butter
- 1/2 cup unsalted butter softened (1 stick)
- 1 1/4 cups light brown sugar packed
- 1 cup granulated sugar
- 3 large eggs
- 2 tsp. baking soda
- 1 tsp. real vanilla extract
- 4 cups oatmeal (I use old-fashioned)
- 2 cups M&Ms divided use
- 1 cup semi-sweet chocolate chips
- 1 cup white chocolate chips NOT vanilla chips or white baking chips
- 1 cup peanuts roasted and salted
- 2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
Instructions
- In a large mixing bowl, beat peanut butter, butter, sugars, eggs, baking soda and vanilla with an electric mixer until smooth and creamy.
- Stir in oats, one cup M&Ms, chocolate chips, white chocolate chips and peanuts.
- Stir in flour with a very heavy metal spoon until mixture is very thoroughly mixed; this may take 4-5 minutes.
- Press mixture into a 10x15” greased glass baking dish.
- Sprinkle remaining one cup of M&Ms evenly on top.
- Press M&Ms into the brownies so they adhere slightly.
- Bake at 350˚ for approximately 25-30 minutes, until top is lightly browned and brownies are set.
- Cool completely before cutting into bars.
