Bacon Tomato Salad

Bacon Tomato Salad is awesome. It only uses a handful of ingredients too. Lettuce, tomatoes, bacon, mild banana pepper rings (if you want to include them), Monterey Jack and Cheddar cheeses, and Cole Slaw Dressing. That’s it. It’s a splendid side for almost any occasion.

We had some friends over from church back in late March. One of the guys is diabetic so I always try to have plenty of stuff he can eat. I made this salad but saved out a large bowl so his wife could put a salad dressing on it that he could eat. We grilled chicken that night. Plus I made my famous Deviled Eggs, Garlic Smashed Cauliflower, Spicy Creamed Corn and a fantastic Pineapple Casserole. Everything was fantastic, but almost all of us had more than one serving of salad!
This is a really quick salad to toss together for a company dinner too. I don’t add the salad dressing until just before serving. But everything else can be made and ready to go for when you want to serve. After all, who doesn’t enjoy a BLT salad? Using a store-bought salad dressing makes everything even easier.
Bacon Tomato Salad is just great. Now that summer is upon us, I recommend bringing this salad to any holiday picnic or family get-together. It’s also delightful for lunch. I was surprised that even with the salad dressing on it, the salad was still tasty the next day. This salad is just what you need for any occasion and the ingredients are always easy to find. But then again, everything is always better with bacon. 🙂
Bacon Tomato Salad with Cole Slaw Dressing is heavenly.
This easy salad includes the savory flavors from bacon and two cheeses, the hot zesty flavors from mild bell pepper rings, and the sweet flavors from the Cole Slaw Dressing. It was a wonderful combination.
Every forkful was marvelous.
Here’s what I did.
I used these ingredients.
Fry bacon in skillet until done.
Cook until done but not scorched. Transfer bacon slices to a paper towel-lined plate to drain.
Place salad mix in a large serving bowl.
Add grape tomatoes that have been cut in half lengthwise.
Spoon out mild banana pepper rings onto paper towels and pat dry to remove excess brine.
Toss salad pepper rings on top of salad.
Add shredded sharp cheddar cheese.
Add shredded Monterey Jack cheese.
Add cooked bacon that’s been broken into one-inch pieces.
Just before serving, add Cole Slaw Dressing.
Stir and toss ingredients well to serve.
Remove salad to individual plates to servve.
This recipe is gluten free if your bacon is gluten free.
I served this salad with Grilled Chicken, Pineapple Casserole, Spicy Creamed Corn, Garlic Smashed Cauliflower and my famous Deviled Eggs.

BACON TOMATO SALAD
(Recipe adapted from Taste of Home)
Bacon Tomato Salad
Equipment
- 1 large serving bowl
- 1 sharp knife to cut vegetables
- 1 large skillet
- measuring cups
- measuring spoons
Ingredients
- 24 oz. pkg. iceberg lettuce salad
- 10 oz. container grape tomatoes halved lengthwise
- 3/4 cup sharp Cheddar cheese shredded
- 3/4 cup Monterey Jack cheese shredded
- 12 slices thick-cut bacon cooked and broken into one-inch pieces
- 1/2 cup mild pepper rings drained and patted dry with paper towels
- 13 oz. jar Lite House Cole Slaw Dressing
Instructions
- Cook bacon in skillet over medium heat; drain on paper towels.
- Be sure not to overcook the bacon or cook on too high a temperature so that it scorches!
- Once cooled, break bacon into one-inch bite sized pieces.
- Set aside.
- Place salad mix into a bowl.
- Layer tomatoes, mild pepper rings and cheeses on top.
- Top with bacon pieces.
- Add cole slaw dressing and serve.
- Refrigerate leftovers.

This savory and sweet salad has just a little bite to it from the banana pepper rings. So yummy.
I have to admit the Pineapple Casserole is one of my favorite recipes. It goes with anything and is really terrific for company dinners or holidays. It certainly went well with this Bacon-Tomato Salad.
