Bacon Tomato Avocado Salad

Bacon Tomato Avocado Salad is exquisite. No kidding. This lovely salad includes bacon, tomatoes and avocados (obviously). But it also has cucumber, mild bell pepper rings, Monterey Jack and Cheddar cheeses. It’s served with a sweet Cole Slaw dressing to top it off. We loved it!

We had some old family friends over for dinner back in April. We’ve known them since about 1995. We also invited our son and daughter-in-law to join us. One of the things I served for that meal was this luscious salad. It was a big hit. My husband isn’t an avocado lover, but he didn’t complain. Everyone else really enjoyed this delectable salad. It has the savory flavors from the bacon and cheeses, but sweet flavors from the salad dressing to contrast those flavors. I added a Hearty Beef Stew with Dumplings and my Mom’s favorite Strawberry Cream Pie and we were all in seventh heaven.
I made this salad several hours before we were going to serve it. But I didn’t add the salad dressing or the avocados until just before company arrived. Truth be told, this salad was even good the next day even though it was refrigerated with the salad dressing combined with it. I didn’t expect it to still be good but it was.
The salad dressing has maltodextrin which is not made from malt. The celiac sites I looked at said it is a gluten free product and usually has no ill effects on those with celiac. Besides that, make sure your bacon is gluten free if you want this salad to stay gluten free.
Bacon Tomato Avocado Salad is terrific as a summer salad. Bring it to any potluck or company dinner. Or just make it for a family dinner. Regardless, everyone will be delighted with this mouthwatering side dish.

Avocados always provide great flavor. The mild salad pepper rings add a little bite. 🙂
Bacon, tomatoes, avocados and two cheeses. What more could you want?
Here’s what I did.
I used these ingredients.
Fry bacon in a non-stick skillet over medium heat until cooked but not scorched.
Place cooked bacon strips on top of a paper towel-lined plate to drain.
Place salad mix in a large salad bowl. Mine includes red cabbage and grated carrot.
Remove mild pepper rings from container and place on paper towels. Pat dry to remove excess brine and moisture.
Line the salad bowl with halved grape tomatoes, quartered and sliced cucumbers, mild bell pepper rings, sharp cheddar cheese and Monterey Jack cheese.
Crumble bacon into one inch pieces and place on top of salad. Refrigerate salad until ready to serve.
Add avocado slices just before serving.
Add the Cole Slaw Dressing just before serving.
Toss salad to mix.
Serve and enjoy.
The combination of crunch, and mild, zesty and sweet flavors has an incredible result, in my opinion.

Bacon Tomato Avocado Salad
Equipment
- 1 large salad bowl with tongs
- 1 skillet
- 1 sharp knife to cut vegetables
- measuring cups
Ingredients
- 24 oz. pkg. iceberg lettuce salad
- 10 oz. container grape tomatoes halved lengthwise
- 1/2 cup mild banana pepper rings drained and patted dry with paper towels
- 1 large cucumber quartered and sliced
- 3 medium avocados peeled, pit removed, sliced
- 3/4 cup Monterey Jack cheese shredded
- 3/4 cup sharp Cheddar cheese shredded
- 12 slices thick-cut bacon cooked and broken into one-inch pieces
- 13 oz. container Lite House Cole Slaw Dressing
Instructions
- Cook bacon in large skillet over medium heat.
- Be sure to not cook at too high a temperature or too long so that the bacon scorches!
- Remove bacon to a paper towel-lined plate to drain.
- Once cooled, crumble bacon into one-inch-sized pieces.
- Set aside.
- Place salad mix into a bowl.
- Layer tomatoes, mild pepper rings, cucumber, avocados and cheeses on top.
- Top with bacon pieces.
- Add cole slaw dressing and serve.
- If not serving immediately, refrigerate before adding dressing; add dressing just before serving.
