Avocado Toast
I love Avocado Toast. It’s one of my favorite breakfast foods. Especially if it’s loaded with Feta Cheese and eggs. I’ve had it with Pico de Gallo. I’ve made it more like a guacamole. Sometimes I simply mash up avocados and add seasonings. It’s great with scrambled eggs, poached eggs or even eggs sunny-side-up. I prefer it with a thick Texas Toast size bread or Hawaiian bread. I’ve also had it without “toast” and had hummus on top. That was wonderful too.

John and I have dined at a lot of Mom and Pop cafes and diners over the past year and a half since we moved to North Dallas. I’ve sampled Avocado Toast at several places, but my favorite version is at the Original House of Pancakes. Their version has the thickest avocado layer and cheese/pico layer of any we’ve tried. It’s also the best value for the money. We’ve eaten there several times with some friends we’ve known for decades.
Avocado Toast is a very versatile recipe. You can make the egg layer almost any way you prefer. You can serve this with fresh fruit and rolls or add a slice or two of bacon if you prefer. Truthfully, if you use a large slice of bread or homemade bread, you will probably find this so filling you won’t want any additional food with it.
If you enjoy Tex-Mex entrees, this is a fabulous entree for a weekend, company or even a holiday breakfast. You can make it to order! My personal preference is making it like a guacamole on the bottom layer then topping it with a Feta cheese layer, followed by scrambled eggs. But my second choice is mashed avocados, topped with Pico de Gallo (drained), then Feta Cheese and finally Poached Eggs. You can crumble up the Feta cheese into really small sprinkles or leave it in chunks, as you desire.
Avocado Toast is one of my favorites (my husband doesn’t like avocados). ;( Here are two versions of this spectacular recipe. Hopefully, they will float your boat like they do mine. 🙂
Avocado Toast is marvelous. I like it with a little fresh oregano sprinkled over top.
This version has poached eggs and Pico De Gallo spread over top of the mashed avocados.
You need a hearty bread for the toast. I used Hawaiian Bread which added a little bit of sweetness to the recipe. It’s also great with Texas Toast or any large sandwich bread or homemade bread.
Here’s what I did.
I used these ingredients. But I used the Pico De Gallo on one version and the tomato and onion in another.
Halve the avocado. Pit the avocado and scoop out of shell with a large spoon.
Place avocado in a bowl and mash with a potato masher.
Mash the avocado until it’s smooth and creamy – or leave chunks if you prefer. At this point you can make up into guacamole if you prefer.
Toast a slice of bread.
Spread with mashed avocado and sprinkle generously with salt and pepper.
Add diced tomatoes and finely diced red onion.
Add Feta Cheese crumbles. You can crumble into smaller pieces if you like that texture. I used a Mediterranean-seasoned flavor.
Spray a non-stick skillet with olive oil. Add beaten eggs.
Cook and scramble to desired consistency.
Spread scrambled eggs over top of the Feta Cheese. Sprinkle with salt and pepper. Garnish with fresh oregano, if desired.
In this version, I spread mashed avocados over top of toasted bread. Sprinkle with salt and pepper.
Spread Pico De Gallo over top of the avocados. If necessary, drain a little of the juice.
Spread Feta Cheese over top. I used a seasoned Feta Cheese. Crumble more, or leave in big chunks, as desired.
Poach eggs. Spread poached eggs over top of the Feta Cheese. Garnish with fresh oregano, if desired.
Garnish Avocado Toast with fresh oregano. Serve with fresh fruit
I love Avocado Toast. It’s a hearty, filling and very satisfying breakfast entree.

Avocado Toast
Equipment
- 1 potato masher
- 1 egg poacher or skillet (if you prefer scrambled eggs)
- measuring cups
- measuring spoons
- 1 spatula
- 2 small mixing bowls
- 1 sharp knife to dice vegetables
- 1 whisk to beat eggs
Ingredients
- 1 slice Hawaiian Sandwich bread toasted
- 1 large avocado peeled, pitted and mashed
- 1 to 2 tbsp. tomato diced
- 1/2 tsp. red onion very finely diced
- 2 to 3 tbsp. Mediterranean Feta Cheese crumbled (or any flavor of Feta Cheese)
- 1/4 tsp. Salt and pepper to taste
- 2 large eggs beaten
- 1/2 tsp. olive oil to grease the skillet
- 1 tsp. fresh oregano leaves for garnish, if desired
Instructions
- Toast bread.
- Slightly mash avocado in a small mixing bowl and spread on top of toast.
- Sprinkle diced tomatoes and onions on top.
- Season to taste with salt and pepper.
- Add Feta cheese crumbles.
- Meanwhile, add olive oil to a hot skillet.
- Add beaten eggs and scramble over medium heat one to two minutes or until done.
- Spread scrambled eggs over top of the Feta cheese.
- Sprinkle eggs with salt and pepper and fresh oregano leaves, if desired.

Avocado Toast can be made so many different ways, it’s mind-boggling!
Make the eggs, sunny-side-up, fried over easy or hard, or whatever way you enjoy eggs.

Yes I have! It’s one of my favorite breakfast ideas. We have so many cafes, diners and brunch houses in the area where we live that we do get to try lots of creative ways to enjoy this fabulous breakfast.

This is really delicious and you can alternate whether you use salsa, pico de gallo or tomatoes on top of the toast!
