Butternut Squash Red Pepper Casserole

I can’t say enough about this scrumptious Butternut Squash Red Pepper Casserole. It’s heavenly. Really. The combination of sweet flavors from the Butternut Squash and savory from the Parmesan cheese, garlic, parsley and rosemary is irresistible. On top of that, it’s fairly easy to whip up using only a handful or so of ingredients.

Over a decade ago, I sampled this tasty casserole at a potluck our Sunday school class was having one Saturday. I loved the recipe and immediately asked for the recipe. Then I forgot about it. I happened to be looking through my computer for recipes to make for a dinner in early May and stumbled across this wonderful recipe again. I knew I would have to make it. I loved it the first time and I think I enjoyed it even more the second time around.
I served this lovely Butternut Squash Red Pepper Casserole with Grilled Chicken, Loaded Bacon and Cheese Potatoes and a Magic Raspberry Cobbler. Our friends brought along a salad. It was perfect with these other foods. This is such a terrific side dish that I recommend you consider serving it for Thanksgiving or Christmas dinner this year. It’s that good!
Unfortunately, while I was baking this recipe, my camera died on me. Literally. The shutter would no longer work so I could not get very good pictures of this tasty dish hot out of the oven. I had to purchase another camera and these pictures are of the casserole reheated a few days later. While it still tasted fantastic, the pictures were not as great as I would have liked.
Even still, Butternut Squash Red Pepper Casserole is a delightful side dish to make for company or family dinners, holidays or potlucks, or because you have an abundance of butternut squash or red bell peppers growing in your garden that you want to get rid of! The seasoning is just perfect and the taste is so irresistible you’ll find you’ll want seconds. 🙂
Butternut Squash Red Pepper Casserole is simply delightful.
This is one of the tastiest ways we’ve ever served Butternut Squash.
Parmesan Cheese, rosemary, parsley and garlic pack a tasty and delicious punch.
Here’s what I did.
I used these ingredients.
Peel the butternut squash. Cut into one-inch chunks.
Place squash in a mixing bowl.
Add red bell pepper, cut into chunks.
Add garlic and rosemary.
Add parsley, pepper, and olive oil.
Stir ingredients to combine.
Spray a 9×13″ glass baking dish with olive oil cooking spray. Pour butternut squash mixture into baking dish.
Top with grated Parmesan cheese.
Bake at 400 degrees for one hour or until squash is completely tender.
Serve garnished with additional Parmesan cheese or fresh rosemary, if desired.
This is a terrific side dish for holiday dinners like Thanksgiving or Christmas.
Butternut Squash Red Pepper Casserole was excellent served with Loaded Bacon and Cheese Potatoes and Grilled Chicken.

BUTTERNUT SQUASH RED PEPPER CASSEROLE
(Recipe adapted from Kate Hess, Hillcrest Baptist Church, Cedar Hill, TX)
Butternut Squash Red Pepper Casserole
Equipment
- 1 9×13" glass baking dish
- 1 sharp knife to cut vegetables
- 1 vegetable peeler
- measuring cups
- measuring spoons
- 1 large mixing bowl
- 1 wooden spoon
Ingredients
- 3 1/2 lbs. butternut squash peeled, seeds removed, cut in 1-inch cubes
- 1 large red bell pepper seeded and cut in 1-inch pieces
- 3 tbsp. olive oil or avocado oil
- 2 cloves garlic finely minced
- 1/2 tsp. fresh rosemary minced
- 1/4 tsp. ground black pepper to taste
- 1/2 cup Parmesan cheese freshly grated
Instructions
- Grease 9×13” baking dish.
- Mix squash, bell pepper, oil, and seasonings in a large mixing bowl and spread into sprayed baking dish.
- Top with cheese.
- Bake at 400˚ for 1 hour or until done.
Notes
NOTE: I used one cup parmesan cheese.
NOTE: I used one and a half butternut squashes.

- 1/2 cup Parmesan cheese shredded or grated finely (see note below)
Instructions

- Top with Parmesan cheese.
