Ok so my Mint Chocolate Fudge Cookies were the hit of the year. But several of my neighbors couldn’t eat them because they were not gluten free. So I decided to make up a batch of Gluten Free Mint Chocolate Fudge Cookies just for them! These were also a big hit–even with those who don’t need to eat gluten free. I used Krusteaz brand gluten free flour and Bob’s Red Mill Baking 1-1 GF flour to make these cookies. I had absolutely no problems with taste, texture or consistency. In fact, they were every bit as good as the original cookies. We loved them.

Gluten Free Mint Chocolate Fudge Cookies are made with two bags of the Walmart brand mint fudge flavored baking chips. This is probably Walmart’s version of Andes creme de menthe baking chips. The cookies also include two cups of finely diced almonds. The mint flavor is just right–not too much that it overpowers the cookie and not too little that you don’t even notice it. The same with the almonds. Everyone detected something but could not tell me what they were tasting! I can’t tell you how many people have RAVED over these cookies!
The only thing I’ll tell you (whether you make these gluten free or NOT), is to make sure you stir, stir, stir the cookie dough once the final ingredients are added. (almonds, GF flour and mint fudge flavored baking chips). Stir beyond the cursory just incorporating the flour, and continue stirring until big lumps begin forming with the dough. This will take 4 to 5 minutes by hand.
Once the dough is stirred correctly then pack the dough into a large cookie scoop before leveling off. That way the cookie ingredients adhere well and won’t crumble out of the cookie scoop. This recipe requires a lot of flour, and this is the only way to get that perfect blend of ingredients with an utterly delightful full-bodied outcome.

Mint, chocolate fudge and almonds make an unbeatable combination.
This is an excellent gluten free dessert for your friends and family.
Here’s what I did.
I used these ingredients, plus Bob’s Red Mill GF Baking 1-1 flour.
Soften butter. Add granulated sugar, brown sugar, eggs, vanilla, baking soda and salt.
Mix ingredients with an electric mixer until smooth.
Add gluten free flour, finely diced almonds and mint fudge flavored baking chips.
Stir, stir, stir until all the flour is incorporated and big clumps start forming in the dough. This will take about 5 minutes.
Pack dough into a large cookie scoop.
Place dough on ungreased baking sheets about 3 inches apart.
Bake at 350 degrees for about 16 minutes. My cookies took 18 minutes to bake completely. Rotate cookie sheets on racks after 8 minutes of baking time.
These whopper-sized cookies are great for tailgating parties.

GLUTEN FREE MINT CHOCOLATE FUDGE COOKIES
(My own concoction)
Gluten Free Mint Chocolate Fudge Cookies
Equipment
- 3 18×26" cookie sheet pans
- 1 large mixing bowl
- 1 1/4 cup cookie scoop
- 1 electric mixer
- measuring spoons
- measuring cups
- 1 wooden spoon
- 1 spatula
- 1 nut chopper to finely dice whole almonds
- 2 wire cooling racks
Ingredients
- 1 1/2 cups unsalted butter softened (3 sticks)
- 1 1/4 cups granulated sugar
- 1 1/4 cups light brown sugar packed
- 2 large eggs
- 1 tbsp. pure vanilla extract (tablespoon NOT teaspoon)
- 4 cups gluten free flour (I used 2 cups Krusteaz & 2 cups Bob's Red Mill GF 1 to 1 baking flour)
- 2 tsp. baking soda
- 1 tsp. sea salt
- 20 oz. pkg. mint fudge flavored baking chips (two 10-ounce packages)
- 2 cups almonds finely diced
Instructions
- Preheat oven to 350°.
- Mix butter, sugars, eggs, vanilla, baking soda and salt in a large mixing bowl with electric beaters until smooth.
- Stir in Gluten Free flour, mint fudge baking chips and almonds.
- Stir thoroughly; this may take 4-5 minutes.
- With a large cookie scoop, scoop cookie dough and pack it into the cookie scoop before leveling it off.
- Place onto ungreased cookie sheets approximately 3-inches apart.
- Bake 12-15 minutes or until lightly browned.
- Rotate cookies on racks every seven to eight minutes while baking.
- Cool cookies about 5 minutes on cookie sheets before removing to wire racks to cool completely.
