Creamy Spinach Tortellini Soup
Creamy Spinach Tortellini Soup was probably one of the best new soup recipes I tried in 2022. It was fantastic and oh, so easy to whip up. The recipe uses just over a handful of ingredients including, spinach, cheese tortellini, canned diced tomatoes, cream cheese, Italian sausage and Chicken Broth. Parmesan Cheese shavings are used for the garnish. Plus, it’s made in the slow cooker. Like I said, EASY, EASY, EASY!

Back in October we visited our youngest son and his family. My daughter-in-law made this delicious soup recipe and her famous Easy No-Knead Dinner Rolls. She told me she had been making it so long and so often she knew the recipe by heart but couldn’t remember where she got it from. I did a Google search and found this recipe which used her exact ingredients. I knew I needed to give it a whirl.
You do have to fry the Italian sausage, but then everything else just gets tossed into the crockpot. The recipe takes close to six hours to slow cook and then you have hot bowls of some of the tastiest soup imaginable! The combination of cream cheese, chicken broth and diced tomatoes makes a delicious base for the soup. The cheese tortellini, Italian sausage and spinach tops it off making it irresistible in my opinion.
Creamy Spinach Tortellini Soup is good for what ails ya! No kidding. It’s real comfort food especially during fall, winter or spring. I also served it with my daughter-in-law’s Dinner Rolls to our Wednesday night community group. It was one meal worth bragging about!

This creamy Slow Cooker soup recipe is perfect with homemade Easy No Knead Dinner Rolls!
The cream cheese cooks down and combines with the chicken broth and tomatoes into a really tasty base for the soup.
Here’s what I did.
I used these ingredients, plus cream cheese.
Fry Italian sausage in a large skillet over low to medium heat.
Break up the sausage with a hamburger masher while cooking so it’s broken into very small pieces.
Continue frying the sausage until it’s no longer pink. Remove from heat. Set aside.
Spray crockpot with cooking spray. Place cheese tortellini in a large 6-quart crockpot. Add petite diced tomatoes.
Add fresh spinach.
Add cream cheese cut into cubes.
Top with the cooked Italian sausage.
Add chicken broth and stir everything to combine.
Cover crockpot with lid and cook on low heat for 4-6 hours. Mine took closer to six hours before being ready. Stir once or twice while cooking.
Add Parmesan Cheese shavings, if desired, before serving.
We gobbled up this soup when my daughter-in-law made it, and did so again when I made it the first week of December.
It was so irresistible with homemade dinner rolls!

Creamy Spinach Tortellini Soup
Equipment
- 1 6-quart slow cooker
- 1 large skillet to fry the Italian sausage
- 1 hamburger chopper to break up the Italian sausage into very small pieces while frying
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 soup ladle
- 1 spatula
Ingredients
- 1 lb. Italian sausage browned and drained
- 19 oz. pkg. cheese tortellini
- 8 oz. block cream cheese cut in cubes
- 5 oz. fresh spinach
- 29 oz. can Italian style diced tomatoes undrained
- 4 cups chicken broth
- 1/4 cup Parmesan cheese shavings for garnish, if desired
Instructions
- Spray crockpot with cooking spray.
- Fry Italian sausage in skillet.
- Cut sausage down into small pieces with a hamburger chopper while browning meat.
- Drain any grease.
- Place cooked sausage, tortellini, spinach, tomatoes, cream cheese cubes and chicken broth in a crockpot.
- Cook over low heat for 4 to 6 hours. (My crockpot took close to six hours).
- Stir occasionally while cooking.
- Stir again and ladle soup into individual bowls.
- Top each serving with shaved parmesan cheese, if desired.
