Apple Fruit Fajitas
Apple Fruit Fajitas are sensational. These delicious “fajitas” are actually fruit pie filling wrapped up in tortillas with a syrup poured over top before baking. They come out so mouthwatering and unbelievably good. They’re so easy to whip up and very versatile for any kind of dessert menu.

I think the first time I tried these delicious Apple Fruit Fajitas was about 25 years ago. I’ve made them occasionally through the years but when our Empty Nester’s group at church had a Tex-Mex night for dinner, I decided to sign up for this dessert. I made Apple and Blueberry and both were fantastic.
Apple Fruit Fajitas, while traditionally a dessert, can also be served at “breakfast for dinner,” as they are a lot like crepes. If apples are your love language, this is a “can’t miss” dessert.
Apple Fruit Fajitas are so scrumptious.
I made this dessert for a Tex-Mex inspired dinner night. But there’s nothing hot or spicy about this recipe.

These Fruit Fajitas are cooked in a syrup that makes them sensational, in my opinion.
Here’s what I did.
I used these ingredients. HEB stores in the DFW metroplex, make their own homemade tortillas.
In a small saucepan, heat the butter, sugar and water until the butter melts.
Sorry this is such an awful picture! Here the syrup has come to boiling. Heat the ingredients until the butter is melted. Remove from burner.
Place a few tablespoonfuls of caramel apple pie filling in the lower half of the tortilla.
Roll up tortilla.
Place the rolled tortillas into a large 10×15″ baking dish or two 9×13″ glass baking dishes. Pour syrup over top, covering each tortilla as much as possible. ALLOW SYRUP MIXTURE TO ABSORB INTO TORTILLAS 45 MINUTES BEFORE BAKING!
Cover with foil and bake at 350 degrees about 30-40 minutes until done.
Apple Fruit Fajitas are mouthwatering–especially if you use caramel apple pie filling!
Each tortilla (fajita) is filled with apple pie filling. The syrup is baked into the tortillas so they are irresistible.
Apple Fruit Fajitas can also be served for “breakfast for dinner.” It’s almost like eating crepes.
This drool-worthy dessert is great for any kind of dinner including company dinners or holiday dinners like Cinco de Mayo.
Here’s the recipe.
APPLE FRUIT FAJITAS
(Recipe adapted from Kathy Waite, Southwest Baptist Church, DeSoto, TX)
Apple Fruit Fajitas
Equipment
- 2 9×13" glass baking dishes or 1 10×15" baking dish and a smaller 7×11" dish.
- 1 small sauce pan
- measuring cups
- measuring spoons
- 1 spatula
- aluminum foil
Ingredients
ROLL UPS:
- 1 can caramel apple pie filling
- 20 small tortillas
SYRUP:
- 2 cups granulated sugar
- 1/2 cup butter (1 stick)
- 1 1/2 cups water
Instructions
ROLL UPS:
- Place a tablespoon or so of pie filling at one end of the tortilla.
- Roll up and place in sprayed 9×13” baking pan.
- Pour sugar mixture over top and LET STAND 45 MINUTES TO ABSORB.
- Bake at 350° for 30-40 minutes, covered, until done.
- (You must cover the pan or the fajitas dry out too much).
SYRUP:
- Place syrup ingredients into a small saucepan and cook over low to medium heat.
- Continue heating until butter is melted.
- Remove from stove top and use in recipe as instructed above.
