Cheesy Green Bean Casserole
Cheesy Green Bean Casserole is fantastic. It’s NOT the typical Green Bean Casserole recipe everyone makes for the holidays. This one is so much better! This one uses sour cream and Cheddar cheese to give it that creamy, gooey texture (instead of canned mushroom soup). It also includes celery, onion and a tasty Ritz cracker crumb topping that includes more Cheddar cheese. It’s a great side dish for any occasion, but certainly for holidays or company meals.

This recipe is one I’ve used many times with different vegetables. It’s mouthwatering with squash, asparagus, mixed vegetables, a blend of broccoli, cauliflower and carrots and certainly with green beans. Truly, this recipe never lets me down. I’ve used the same basic ingredients just swapping out the veggies and every time our company has raved over it.
I made up a batch of this Cheesy Green Bean Casserole, Creamy Sweet Corn, and an Orange Creamsicle Fluff for an Empty Nesters Dinner last month. Our hostess told us afterwards that everything was a hit. We ended up not being able to go to the dinner because we received invitations to a trustee meeting for my husband’s former place of employment. I had purchased all the ingredients and the hostess for our dinner needed these side dishes so I went ahead and made them. I dropped them off at her house prior to our stay at the Renaissance hotel in Plano.
The green beans had been cooking in a crockpot but still weren’t done so I couldn’t really get many good pictures. I gave the hostess an empty plastic container and asked her to save any of the leftovers for me (for pictures), if there were any. She obliged so I was able to snap a few after the fact. I had made up a large Pork Roast with Sauerkraut and served the leftovers with that.
Cheesy Green Bean Casserole is really a great side dish for company. It even reheats wonderfully. I recommend it for holidays like Mother’s Day or Father’s Day. Everyone will want seconds! 🙂
Cheesy Green Bean Casserole is one of our favorite ways to enjoy Green Beans!
This tastes sooooo much better than the typical Green Bean Casserole recipe with cream of mushroom soup.
Here it is served with Pork Roast and Sauerkraut.
Here’s what I did.
I used these ingredients.
Place celery, onion, Cheddar cheese, sour cream, salt and pepper in a large mixing bowl.
Microwave the green beans for five minutes for each package. Drain. Add to mixing bowl.
Stir ingredients with a wooden spoon to combine.
Spray either a baking dish or a crockpot with cooking spray. Spread green bean mixture into baking dish or crockpot.
Place crushed Ritz crackers and Cheddar cheese in a medium mixing bowl. Add melted butter.
Stir ingredients to combine.
Sprinkle Ritz cracker mixture over top of the green beans in casserole dish or crockpot.
Bake about 2-3 hours on low in the crockpot or about 30 minutes in the oven in baking dish until crumbs start turning golden brown.
Serve.
This cheesy, creamy Green Bean Casserole is marvelous to the taste buds.
Even the leftovers were delicious served with Pork Roast and Sauerkraut.

CHEESY GREEN BEAN CASSEROLE
(My own concoction)
Cheesy Green Bean Casserole
Equipment
- 1 large baking dish or the rectangular crock pot if you want to slow cook the reccipe
- 1 large mixing bowl
- 1 small mixing bowl
- 2 wooden spoons
- 1 Rolling Pin unless you want to crush the Ritz crackers in your hands
- measuring cups
- measuring spoons
- 1 sharp knife to cut vegetables
- 1 fork
Ingredients
- 36 oz. bag whole green beans (three 12-ounce bags)
- 1 cup celery chopped
- 1/3 cup onion chopped
- 1 cup sour cream
- 1/2 cup sharp Cheddar cheese shredded
- 1/4 tsp. sea salt
- 1/8 tsp. ground black pepper or to taste
- 2 cups Ritz crackers crushed
- 1/2 cup butter melted (1 stick)
- 1/2 cup sharp Cheddar cheese shredded
Instructions
- Cook green beans in microwave and drain.
- (I cook each 12-ounce bag for about 5 minutes on high).
- In a large mixing bowl, combine green beans with celery, onion, sour cream, 1/2 cup of Cheddar cheese and salt and pepper to taste.
- Pour into a greased 2-quart casserole dish.
- Then combine remaining ingredients (melted butter, Ritz cracker crumbs and 1/2 cup cheese) in a mixing bowl with a fork.
- Sprinkle cracker crumb mixture over top of veggie mixture in casserole dish.
- Bake at 300 degrees for 30-40 minutes.
