Ham Cobbler
I have to admit I enjoy the comfort of potpies and Shepherd’s pies. Ham Cobbler is pretty close to the first. I have a delicious mix of ham and vegetables in a very thick sauce. That mixture is topped with Cheddar Bay Biscuits which are spread with a garlic butter topping after the casserole is baked. Yum, yum, yum!

I cooked up a large spiral-cut ham for Easter for our family. Those hams produce about 25-30 servings each, so I had a LOT left over. I decided to make up a Ham Cobbler using a combination of a few different recipes I had collected over the years. I used only two cups of diced ham, yet still this recipe made up enough for 15 servings. It’s a terrific way to use up leftover ham from the holidays.
While the recipe has several steps, the outcome is certainly worth it. It’s also a great entree to take to potlucks or certainly when having company since it makes so many servings. If you enjoy comforting casseroles with biscuits, you’re sure to love this great recipe.
Ham Cobbler is a delicious comfort food meal.
Ham and vegetables are topped with Cheddar Bay Biscuits making for one fantastic dining experience!
The seasoning from the biscuits as well as the ham casserole really amps up the flavors of this tasty dish.
Here’s what I did.
I used these ingredients for the ham casserole. Although I used more flour than the pictures indicate.
Place butter in a large Dutch oven over medium heat. Add diced leeks, onion, celery and garlic.
Stir to combine and cook until the vegetables are crisp tender – about 3-5 minutes.
Add a 12-ounce bag of frozen mixed vegetables. Stir to combine.
Stir in flour and cook about a minute. (I used more flour than this picture indicates).
Add a quart of ham stock or chicken broth (or you can use vegetable broth).
Season with herbs, salt and pepper. Cook about 10 minutes, until mixture thickens.
Add half-and-half or heavy whipping cream.
Cook an additional two minutes allowing mixture to thicken.
Add cooked, diced ham.
Stir to combine; remove from heat.
Pour ham mixture into a greased 9×13″ glass baking dish; set aside.
I used these ingredients for the Cheddar Bay Biscuits.
Place flour in a mixing bowl. Add salt, baking powder and baking soda.
Stir ingredients well to combine.
Cut in cold butter with a pastry blender.
Coarse crumbs will form.
Add cheddar cheese, garlic powder and whipping cream or half-and-half.
Stir to combine; mixture will be barely moistened.
Place large cookie scoopfuls of the biscuit dough to cover the top of the ham mixture.
Bake at 400 degrees for 18-23 minutes, until biscuits are cooked through. My biscuits took about 26 minutes to bake completely. Spread garlic butter topping over top of biscuits as soon as they come out of the oven.
I used these ingredients for the garlic butter topping.
Melt butter in a measuring cup. Add remaining ingredients.
Stir to combine.
As soon as the cobbler comes out of the oven, brush the tops with the garlic parsley butter topping. Use up all of the butter, covering the biscuits two or three times, if necessary.
Go over the biscuits several times using up all of the butter mixture until each biscuit is well-covered with the garlic parsley butter.
Ham Cobbler is very heart, filling and satisfying.
Cheddar Bay Biscuits on top make this one fantastic ham entree.

Ham Cobbler
Equipment
- 1 9×13" glass baking dish
- 1 large Dutch Oven
- 2 wooden spoons
- 1 sharp knife to cut meat and vegetables
- measuring cups
- measuring spoons
- 1 large mixing bowl
- 1 pastry blender
- 1 pastry brush
Ingredients
HAM MIXTURE:
- 2 cups ham diced
- 32 oz. chicken stock or ham stock or vegetable broth
- 1/2 cup celery diced (about one large rib celery)
- 1/2 cup onion diced
- 2 small leeks green top removed, washed thoroughly and diced
- 2 cloves garlic finely minced
- 12 oz. bag frozen mixed vegetables
- 1/4 cup salted butter (1/2 stick)
- 1/2 cup half-and-half or heavy whipping cream
- 3/4 cup flour (I used unbleached)
- 1 tsp. dried thyme
- 1 tsp. dried marjoram
- 1 tsp. dried parsley
- 1/2 tsp. sea salt
- 1/2 tsp. ground black pepper
CHEDDAR BAY BISCUIT TOPPING:
- 2 1/2 cups flour (I used unbleached
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. sea salt
- 4 tbsp. salted butter cold
- 1 1/2 cups sharp Cheddar cheese shredded
- 1 1/2 cups whole milk or two cups half-and-half or heavy whipping cream
- 1/4 tsp. garlic powder
GARLIC PARSLEY BUTTER GLAZE:
- 4 tbsp. salted butter melted
- 1/2 tsp. garlic powder
- 3/4 tsp. dried parsley
- 1/8 tsp. sea salt or to taste
Instructions
HAM MIXTURE:
- In a Dutch oven, melt butter.
- Add celery, onion, leeks and garlic.
- Sauté until tender, about 5 minutes or when vegetables are about fork tender.
- Add frozen mixed vegetables and stir to combine.
- Sprinkle flour over top of veggies and stir to combine.
- Cook another 2 minutes.
- Add ham stock or chicken broth about 1/8 cup at a time until thoroughly incorporated.
- Add parsley, marjoram, thyme, salt and pepper and stir into mixture.
- Cook until thickened—about 10 minutes.
- Add half-and-half or heavy whipping cream and cook an additional 2 minutes until incorporated and thickened.
- Stir in ham.
- Grease a 9 x13” glass baking dish.
- Pour ham mixture into prepared dish.
- Top with large cookie scoops of Cheddar Bay Biscuit dough.
- Bake at 400° for 18-23 minutes or until biscuits are cooked through and biscuits are golden brown.
- Brush Butter Glaze over top of biscuits as soon as they come out of the oven.
CHEDDAR BAY BISCUITS:
- Combine flour, baking powder, baking soda and salt in a medium-sized mixing bowl.
- Cut cold butter into flour mixture using a pastry blender.
- Add sharp Cheddar cheese, milk (or half-and-half), and garlic powder.
- Stir with a wooden spoon until combined, but don't over mix.
- Scoop dough with a one-quarter cup cookie scoop and drop the dough onto the ham and vegetable mixture.
- Bake for 18-23 minutes in preheated oven.
- The tops of the biscuits should begin to turn light brown and biscuits will be firm to the touch.
- While the biscuits are baking, prepare Butter Glaze.
GARLIC PARSLEY BUTTER GLAZE:
- Melt butter is a small bowl in the microwave.
- Stir in garlic powder, dried parsley flakes and sea salt.
- Use a pastry brush to spread the Butter Glaze over the tops of all the biscuits as soon as they come out of the oven.

Ham Cobbler is an excellent way to use up leftover ham from the holidays.
