Apricot Fluff is so delicious. This fluffy fruit salad starts with Apricot Jell-O and apricots. It also includes cream cheese, instant vanilla pudding, Cool Whip, crushed pineapple, miniature marshmallows, diced pecans and maraschino cherries for decoration. The fluff is thick and creamy and absolutely heavenly. If you enjoy apricots and apricot-flavored foods, this will become a go-to recipe. It’s that good.

My son has always enjoyed apricots so I thought I would make this salad for Easter dinner when we came over to his house this year. I also brought along Apricot Glazed Ham. Laura served my Cheesy Red Potatoes, Green Beans, Dinner Rolls, Tossed Salad and dessert. We had a lot of food and more than a few leftovers. I gave some of the leftovers to our neighbors (who always appreciate getting goodies from us) and left the rest for John, who absolutely devours any kind of fluff-type salad.
The process for making Apricot Fluff takes about four hours because of the refrigeration time needed in between each stage. After that if you refrigerate it for a few hours or overnight, you’re good to go. The hardest thing about this recipe is finding apricot jell-O. I found it in the Metroplex at HEB. Couldn’t get it at Walmart, Kroger or Tom Thumb. But most of the high end grocery stores should carry it.
Apricot Fluff is a gorgeous salad to serve for company or holiday dinners. The appearance is elegant and pleasing and, if you enjoy apricots, it just can’t be beat. This heavenly salad should be one of the first things you choose for potlucks, backyard barbecues or holiday dinners. Everyone will love it.

This is a refreshing fruit salad that’s creamy and fluffy.

Apricot Fluff is fruity with just a hint of crunchiness from the pecans.
Here’s what I did.
I used these ingredients.
Pour apricot jell-o into a mixing bowl.
Add boiling water.
Stir well with a spoon and dissolve jello.
Add cold water and stir again. Refrigerate for 15 minutes.
Add vanilla pudding mix.
Whisk ingredients together until pudding mix is completely dissolved. Refrigerate another 20 minutes.
The mixture will be almost completely set after 20 minutes.
Chop apricots.
Dice pecans.
Drain pineapple very well in colander pressing until the liquid is removed.
Add softened cream cheese, Cool Whip and miniature marshmallows to cold Apricot Jello mixture.
Add drained pineapple, diced apricots and pecans to apricot jello mixture.
Stir to combine. Transfer mixture to a trifle dish, glass bowl or parfait dishes.
Sprinkle remaining pecans and remaining marshmallows over top. Decorate edges with apricot slices and maraschino cherries, as desired. Refrigerate until ready to serve or overnight.
Apricot Fluff is great for company or holiday dinners. You can make the salad up into individual parfait dishes, if desired.
This fluff-type salad is not only beautiful to look at, it tastes heavenly.

APRICOT FLUFF
(My own concoction)
Apricot Fluff
Equipment
- 1 trifle dish or glass bowl or 12 parfait dishes
- 1 mixing bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 nut chopper to chop nuts if not previously chopped
- 1 sharp knife to cut fruit
Ingredients
- 3 oz. pkg. apricot jello
- 1 cup boiling water
- 1 cup cold water
- 5.1 oz. pkg. instant vanilla pudding mix
- 8 oz. pkg. cream cheese softened (one block)
- 8 oz. container Cool Whip
- 2 cups miniature marshmallows divided use
- 20 oz. can crushed pineapple drained well in colander
- 15 oz. can apricots drained and diced
- 15 oz. can apricots drained and sliced
- 1/2 cup pecans finely diced (measure after chopping) divided use
- 12 maraschino cherries for garnish, if desired
Instructions
- Dissolve Jell-O in boiling water in a large mixing bowl until fully dissolved.
- Add cold water and stir to combine.
- Place bowl in refrigerator and refrigerate mixture approximately 15 minutes.
- Add pudding mix and whisk into Jell-O mixture until pudding mix is completely dissolved.
- Refrigerate mixture an additional 20 minutes.
- Beat in softened cream cheese, whipped topping, ¾ of the marshmallows, drained, diced apricots, crushed, drained pineapple, and all but two tablespoons of the diced pecans with a whisk until the cream cheese is totally dissolved into the mixture.
- Refrigerate mixture for 2 hours.
- Transfer mixture to a trifle dish, glass bowl or individual parfait dishes.
- Garnish fluff with remaining miniature marshmallows, drained apricot slices, diced pecans and maraschino cherries.
- Serve fluff with a large serving spoon.
- Or, scoop fluff into individual parfait glasses and top individual servings with remaining marshmallows, drained, sliced apricots and diced pecans.
- Top each individual serving with a maraschino cherry for garnish.

For those who adore apricots and creamy, fluffy salads, Apricot Fluff seems to be an excellent gluten-free solution.
