Slow Cooker Beef Stew
Slow Cooker Beef Stew is a great entree to make up for lazy days when you don’t want to spend ALL day in the kitchen. It’s so nice tossing everything into the crockpot and forgetting about it. This Beef Stew recipe includes the typical ingredients like potatoes, carrots, celery, tomatoes and mushrooms. It also includes Worcestershire sauce to give it some zip and a lot of delicious herbs to amp up the flavors.

I had a friend who had foot surgery a day after she got back from her dream vacation in Greece. I made two different meals for her. The first one included Ravioli Lasagna, Homemade Bread, Pineapple Chiffon Salad and Blueberry Almond Blondies. I also included some Pineapple Macadamia Muffins for breakfast. The second meal included Slow Cooker Beef Stew, my Easy Homemade No-Knead Dinner Rolls, Church Jello and Almond Fudge Shortbread. They loved both meals, but having this entree in the slow cooker made this meal even easier to toss together.
If you enjoy Beef Stew recipes this one’s a beaut. It’s great for dinner any time of the year, but now that fall is upon us, it’s really so wonderful and comforting–especially if it’s served with homemade rolls. Enjoy.
Slow Cooker Beef Stew is terrific served with Homemade Dinner Rolls or any kind of bread.
Tossing everything into the Slow Cooker makes this so very easy.
It’s also wonderful served with biscuits. We brought these home from Babe’s Chicken House in the Dallas Metroplex.
Slow Cooker Beef Stew is a wonderful entree for cool, fall nights.
Here’s what I did.
I used these ingredients.
Place stew beef in a large 7-8-quart crockpot. This one is only six and I had to transfer stuff to another crockpot later!! 🙁
Cover with lid and cook on low heat about 2 1/2 hours.
Here the meat has cooked about 2 1/2 hours.
Meanwhile, cut your vegetables.
Add vegetables to slow cooker.
Add mushrooms, diced tomatoes, tomato paste and bay leaves.
Add seasonings and Worcestershire sauce.
Stir ingredients to combine; cover with lid. Cook on low heat about six hours or high heat about three hours. You can see the crockpot is getting really full. 🙁
Here I had to transfer all the ingredients to a larger crockpot. I also added extra seasonings because I felt the stew needed more.
Add thawed, frozen mixed vegetables. Cook about 30 minutes on low.
Combine flour and water into a paste and whisk until no lumps remain.
Remove bay leaves. Add flour paste to crockpot to thicken the stew.
Stir to combine and heat through about 5-10 minutes. Serve.
Garnish Slow Cooker Beef Stew with fresh oregano, if desired. Serve with homemade rolls, biscuits or bread.
It was also grand served with Jalapeño bread.

SLOW COOKER BEEF STEW
(My own concoction)
Slow Cooker Beef Stew
Equipment
- 1 7 or 8-quart crockpot
- 1 sharp knife to cut vegetables
- measuring cups
- measuring spoons
- 1 wooden spoon
Ingredients
- 2 lbs. stew beef cut into one-inch cubes
- 4 cups beef broth
- 1 1/4 tsp. ground black pepper
- 1 1/2 tsp. sea salt
- 2 tsp. dried thyme
- 2 tsp. dried oregano
- 2 tsp. dried chives
- 2 tsp. dried parsley
- 2 tsp. dried marjoram
- 2 tsp. dried rosemary
- 2 bay leaves
- 1 lb. petite red potatoes washed but unpeeled
- 2 cups sliced carrots
- 1 large green bell pepper chopped
- 2 ribs celery cut in one-inch pieces
- 8 oz. can sliced mushrooms drained
- 29 oz. can petite diced tomatoes
- 1 large onion chopped
- 3 cloves garlic finely minced
- 3 oz. can tomato paste (half of a six-ounce can)
- 1 tbsp. Worcestershire sauce
- 12 oz. bag frozen mixed vegetables thawed
- 1/2 cup unbleached all-purpose flour
- 1/4 cup water or as needed
Instructions
- Toss stew beef in crockpot with beef broth.
- Cook on low heat about two and a half hours.
- Add seasonings, potatoes, carrots, bell pepper, celery, mushrooms, tomatoes, onion and garlic.
- Stir in tomato paste and Worcestershire sauce.
- Cook on low heat about 6 hours, or high heat about 3 hours, or until carrots are almost tender.
- Add frozen mixed vegetables and heat through an additional 30 minutes or until tender.
- Remove bay leaves.
- Combine flour and water with a whisk until no lumps remain.
- Stir into stew.
- Heat through about 5-10 minutes.
- Serve.

We really enjoy eating Beef Stew with homemade biscuits or rolls.
Garnishing the stew with a little fresh oregano sprinkled over the top adds just the right touch.
