Parmesan Chicken Thigh Bake

Parmesan Chicken Thigh Bake is a super easy recipe that includes a delicious coating made with Parmesan cheese, lemon pepper, parsley and thyme. It’s so simple and delicious and turns out great every time. I’ve cut out the butter and bread crumbs from the original recipe to cut down calories and gluten. Yet, it’s still a savory entree that’s really wonderful.

I’ve been going through our freezers unloading meat several times a week and either grilling it or baking it (like in this recipe). My Christmas Cookie Extravaganza baking starts in October so I’m trying to make sure I have plenty of room for all those cookies. We are getting close to the point where the freezers are just about all emptied out!
I’ve made several recipes with chicken thighs recently, since I’d purchased quite a few of them on sale. This recipe turned out exceptionally well. The chicken also reheats quite well in a toaster oven if you cook off a lot at once and want to enjoy them throughout the week.
Parmesan Chicken Thigh Bake is a great entree to serve with almost any kind of side dish or salad. It takes less than five minutes to be oven ready and about an hour to cook. You can skin the chicken thighs, if preferred. If you need a quick and easy recipe that’s not over-involved with steps, this is it! Enjoy it with your favorite potatoes, vegetable or salad today.
Parmesan Chicken Thigh Bake uses only six ingredients, so it’s really easy to work with.
While I used bone-in chicken thighs, you can also use boneless, skinless chicken thighs.
This is a great entree for week-night suppers. It can be oven-ready in 5 minutes. If you cook it at a higher heat, this can be ready in about 30 minutes.
Here’s what I did.
I used these ingredients.
Place grated parmesan cheese on a plate. Add salt, dried thyme, lemon pepper and dried parsley.
Stir ingredients well to combine.
Dredge chicken thighs in parmesan cheese mixture. If desired, you can skin the chicken thighs before starting.
Dredge both sides of chicken thighs.
Spray a 10×15″ glass baking dish with cooking spray. Place chicken thighs into dish. Sprinkle any remaining parmesan cheese mixture over top of the chicken thighs.
Bake chicken at 350 degrees, uncovered, for about an hour, or until done.
Serve Parmesan Chicken Thigh Bake with your favorite sides including fruit or salad.
We served this entree with a fruit bowl, but it’s equally good with mashed potatoes or any hot side dish.
Parmesan Chicken Thigh Bake is gluten free for those with gluten intolerance.

PARMESAN CHICKEN THIGH BAKE
(My own concoction)
Parmesan Chicken Thigh Bake
Equipment
- 1 10×15" glass dish
- 1 plate
- measuring cups
- measuring spoons
- 1 wooden spoon or fork
Ingredients
- 1/2 cup grated Parmesan cheese
- 1 tbsp. dried parsley
- 1 tsp. sea salt
- 1/4 tsp. dried thyme (or more, if desired)
- 1/4 tsp. lemon pepper (or more, if desired)
- 10 chicken thighs
Instructions
- Preheat oven to 350°.
- Combine Parmesan cheese and seasonings in shallow dish.
- Dip chicken in crumb mixture.
- Coat both sides well.
- Grease a 9×13” glass baking dish.
- Add seasoned chicken.
- Sprinkle any remaining coating on top of the chicken thighs.
- Bake, uncovered, for 1 hour or until chicken is cooked completely.

This easy chicken entree is really delightful for family dinners. But it’s versatile enough to serve company as well.
This is also a great potluck entree. You can use chicken legs, thighs or wings, if you prefer.
