During the summer, I was asked by Paradise Fruit Company if I would like to use some of their products in recipes. I like to use a lot of candied fruit in recipes for our yearly Christmas Cookie Extravaganza, so I said, “YES!” We received the package just before we went on our 16-day Hawaiian cruise. 🙂 As soon as we got back in mid-October, I hit the ground running and started, baking, baking baking. Because I am older now, I space out the baking to about 4 days a week over a 4-week long process. This gives me time to rest up in the interim. (Because I am baking 250-300 cookies each time, it gets tiring being on my feet for ours on end)! The cookies are packed in freezers until we’re ready to distribute them around the first week of December.
You probably wonder why I start so early? That way I can enjoy the many different holiday parties we attend since all the baking has been done and completed by Thanksgiving. I plan to make 16 different kinds of cookies along with other recipes that include scones, muffins, Cinnamon Rolls and donuts with all those goodies. White Chocolate Green Cherry Cookies are one of the first recipes I’m rolling out from this year’s Christmas cookie baking.
My husband and I were also approached by our community magazine to provide a spotlight section for their Christmas edition. Since we deliver cookies to our neighborhood (about 100 homes), they wanted to see the process and take some pictures for their magazine. My husband and I happened to be making these delicious cookies when they came to take action pictures. And of course, the writer for the article and the photographer both got samples before they left. 🙂
I made eight batches of these cookies when I was baking, so my pictures reflect that amount rather than a single batch. I hope you give these excellent cookies a try for your holiday baking this year. They’re worth it!
We loved how these White Chocolate Green Cherry Cookies turned out–especially hot out of the oven!
These cookies also contain pecans for added crunchiness.
White Chocolate Green Cherry Cookies are so cute and festive with their pretty green cherries. They’re perfect for holiday gift-giving.
Yes, I could have gorged on a stack of these lovely cookies, had I allowed myself to do so! 😉
Here’s what I did.
I used these ingredients. Be sure to find REAL white chocolate chips with cocoa in the ingredients, not merely white vanilla chips.
I made two large pans (4 batches in each pan), so my pictures reflect more than a single batch.
Add brown sugar, granulated sugar, eggs, salt, baking soda and vanilla extract.
Cream ingredients with an electric mixer until smooth.
Chop up the green cherries and set aside.
Now add UNBLEACHED all-purpose flour. (Bleached flour toughens baked goods). Add pecans, white chocolate chips and green cherries.
Stir ingredients until very well combined. This may take 4-5 minutes.
Grease baking sheets. Use a large 1/4 cup cookie scoop to scoop dough and place on cookie sheets. Make sure there’s about two to three inches between cookies because the cookies expand while baking.
Bake at 350 degrees for about 15 – 20 minutes. Rotate cookie sheets on oven racks after 10 minutes of baking time.
Serve!
Green cherries explode in flavor in these scrumptious cookies.
Every bite is so drool-worthy!
If you’re looking for a great Christmas Cookie idea for holiday baking this year, these cookies are terrific.
