Chocolate Vanilla Oatmeal Cookies
Chocolate Vanilla Oatmeal Cookies were a real winner around our house during our Christmas Cookie Extravaganza this year. These luscious cookies include both chocolate and vanilla chips in an Oatmeal Cookie with pecans and coconut. They’re super rich and super good. Every bite will rock your world!

I wasn’t planning on making these cookies this year for Christmas gift giving. But I had so much extra coconut, pecans and chocolate chips on hand that I decided to give them a go. I started with a favorite cookie recipe but swapped out stuff and included other delicious ingredients.
These cookies ended up being the 16th different type of cookie I baked for Christmas. The others included White Chocolate Green Cherry Cookies, Cherry Meltaways, Tropical Pineapple Meltaways, Mexican Wedding Balls, Cherry Pineapple Date Cookies (a big hit), Cranberry Orange Cookies (raved over by everyone), Grandma’s Log Cabin Cookies (another favorite), Snickers Ooey Gooey Bars, Butterfinger Ooey Gooey Bars, Heath Toffee Ooey Gooey Bars, Reese’s Peanut Butter Cup Ooey Gooey Bars, Butterfinger Meltaways, Pecan Treats, Pumpkin Chocolate Chip Cookies and Coconut Date Balls. I also made a few other things but these were the cookies and bars I made.
The biggest winners were the Ooey Gooey Bars and the Meltaway cookies. All of those got the most likes from family and friends. But these Oatmeal Cookies and the Cherry Pineapple Date Cookies were a close second. There wasn’t one cookie that didn’t get a mention. They were all loved and enjoyed!
Chocolate Vanilla Oatmeal Cookies can be made any time of the year, including but certainly not limited to Christmas! These are great to take to tailgating parties, potlucks and any time you’re entertaining a crowd (because they make A LOT! If you need a dose of chocolate this is a great way to get it!

These scrumptious Oatmeal Cookies include both chocolate chips and vanilla chips for maximum flavor!
Stack them up on a plate, add a glass of milk, and enjoy!
This batch of Chocolate Vanilla Oatmeal Cookies makes a lot. So they’re great to take to potlucks or when feeding a crowd!
Here’s what I did.
I used these ingredients.
Soften butter. (I usually leave it out on the counter overnight). I was making six batches of the recipe so ingredient amounts are different than a single batch.
Add granulated sugar, brown sugar, vanilla, eggs, baking powder, baking soda and salt.
Mix ingredients with an electric mixer until smooth and creamy.
Add unbleached flour (bleached flour toughens baked goods); add oatmeal.
Add chocolate chips, vanilla chips, coconut and chopped pecans.
Stir very well until ingredients are thoroughly combined.
Grease cookie sheets. Scoop and pack dough into a large cookie scoop. Pack about 7/8 full.
Place cookie dough on greased cookie sheets.
Bake at 350 degrees about 18-19 minutes or until done. (Rotate cookie sheets on oven racks after 9 minutes of baking time).
These fantastic Oatmeal Cookies are loaded with pecans, coconut, chocolate chips, vanilla chips and oatmeal. Every bite is heavenly.
These are great cookies to take to tailgating parties or potlucks.
Sit down with a stack and dig in!
Seriously, these cookies are “knock your socks off” good!

CHOCOLATE VANILLA OATMEAL COOKIES
(My own concoction)
Chocolate Vanilla Oatmeal Cookies
Equipment
- 2 18×26" cookie sheet pans
- 1 large mixing bowl
- 1 wooden spoon
- 1 electric mixer
- 1 nut chopper (if nuts are not previously chopped)
- measuring cups
- measuring spoons
- 2 wire cooling racks
- 1 spatula
Ingredients
- 2 cups unbleached flour (bleached flour toughens baked goods)
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. sea salt
- 1 cup salted butter softened (2 sticks)
- 1 cup granulated sugar
- 1 cup light brown sugar packed
- 2 large eggs
- 1 tsp. pure vanilla extract
- 2 cups old-fashioned oatmeal dry (not cooked)
- 1 cup sweetened coconut
- 1 cup chopped pecans (measure after chopping)
- 12 oz. pkg. semi-sweet chocolate chips
- 12 oz. pkg. vanilla chips or premiere white baking chips
Instructions
- Preheat oven to 350°F.
- Grease two large cookie sheets.
- Set aside.
- In a large mixing bowl, mix together the butter, brown sugar, granulated sugar, eggs, vanilla extract, baking powder, baking soda and salt.
- Blend well with an electric mixer until smooth.
- Stir in flour, coconut, oatmeal, pecans, chocolate chips and vanilla chips until thoroughly mixed.
- Press cookie dough into a ¼ cup cookie scoop using a scant measure.
- Press firmly or the dough will crumble when you drop the scoopfuls of cookie dough onto a cookie sheet.
- Space cookies 2 to 3 inches apart on greased baking sheets.
- Bake for 17 to 22 minutes or until lightly browned and just set.
- Rotate cookie sheets on oven racks after nine minutes of baking time.
- Transfer to wire racks to cool completely.
