Watermelon Feta Salad

Watermelon Feta Salad was one of the best new recipes I tried in 2023. This lovely refreshing salad includes watermelon, grape or champagne tomatoes, red onion and Feta Cheese in a simple vinaigrette made with olive oil, white balsamic vinegar and sea salt. It’s actually a quick and easy salad to make up. Extra time is needed only if you decide to use a melon baller to shape the watermelon rather than to cut it in chunks for serving.

Last August, our community group got together after being gone most of the summer. The hostess asked everyone to bring salads since it was so hot. If you’ve suffered through a Texas summer, you know exactly what I mean. Last summer was one of the hottest on record with more 105+ degree days than ever before. I brought a Southwestern Chicken and Cornbread Salad and this delicious Watermelon Feta Salad.
I always like bringing salads that not everyone else brings. Something a little different is my motto! 🙂 Everyone raved over these salads and we had quite a few to choose from that night. Not only does Watermelon Feta Salad present beautifully, but it really tastes scrumptious. Another plus, is that it uses NO sugar and NO gluten. It’s better to serve it the day you prepare it, but I even ate some of it the next day and wasn’t disappointed.
Watermelon Feta Salad is a sensational salad for potlucks and company dinners. Almost everyone will try it and it’s healthy enough that most people will prefer it over other salads laden with calories. Enjoy.

Watermelon balls make it pretty, but the balsamic vinaigrette makes it delicious!
This healthy salad recipe is sugar free, gluten free and low calorie.
Watermelon Feta Salad is a terrific salad for lunches or salad bar luncheons.
Here’s what I did.
I used these ingredients. The red bowl contains watermelon balls that were cut in advance.
Measure out olive oil into a glass measuring cup.
Add white balsamic vinegar.
Add sea salt.
Stir ingredients to combine and pour into a mixing bowl.
Add grape tomato halves and red onion rings.
Add arugula lettuce.
Stir ingredients allowing salad dressing to coat the arugula.
Add watermelon balls and crumbled Feta cheese.
Stir again to combine ingredients.
Transfer ingredients to a trifle dish or serving bowl; serve.
Watermelon Feta Salad is great to take along to a potluck gathering.
I had my husband cut up all the watermelon with a melon baller. Then we weighed out exactly two pounds for this recipe.
Watermelons can be obtained from about April to November in Texas, so we’re able to eat this salad several times during the season.
This is really a healthy salad recipe. Some may not be able to eat dairy. In that case, consider a “vegan” style Feta cheese.

WATERMELON FETA SALAD

Watermelon Feta Salad
Equipment
- 1 mixing bowl
- 1 trifle dish or serving bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 melon baller
- 1 sharp knife to halve tomatoes and slice red onion
- 1 whisk
Ingredients
- 3 tbsp. olive oil
- 2 tsp. white balsamic vinegar or champagne vinegar
- 1/2 tsp. sea salt
- 10 oz. container grape tomatoes halved (or champagne tomatoes, halved)
- 3 cups arugula
- 1/3 cup red onion sliced and separated into rings (original recipe used one cup)
- 2 lbs. watermelon balls or chunks (seeded)
- 4 oz. Feta cheese crumbled (or more, if desired)
Instructions
- Whisk olive oil, balsamic vinegar and salt in a mixing bowl (or serving bowl).
- Add grape tomatoes, arugula and red onion and stir to combine.
- Gently stir in watermelon and Feta Cheese.
- Serve.

Watermelon Feta Salad is a marvelous side dish for almost any meal.
If you’re having company for dinner, this is beautiful served out of a trifle dish.
