Coconut Chocolate Chip Meltaways
I know not everyone’s a coconut lover, but if you enjoy coconut and chocolate, these melt-in-your-mouth cookies will be a huge hit at your house! I loaded these delicious cookies up with two bags of chocolate chips and two cups of coconut. They were sensational to say the least.

Our neighborhood HOA put out an article in their monthly publication for November/December about how John and I make Christmas Cookies each year for all the homes in our neighborhood (about 100). Our complex has over 3,000 homes, but we stick with our neighborhood. As a result, we had one of the gals who assembles Christmas Cookie bags for the infirm and shut-ins if we would bake up some cookies for them. We said yes, so I made up a batch of Coconut Chocolate Chip Meltaways and a batch of Reese’s Peanut Butter Cup Meltaways.
While they only asked for about three dozen cookies or bars, each batch of these cookies makes about 5 1/2 dozen. The team stuffing the gift bags were thrilled to get them along with about 500 other cookies. They were able to process about 100 bags of Christmas Cookies for those in our community who can’t get out. Of course, Reese’s Peanut Butter Cups and anything chocolate go over really well just about anywhere. They were certainly well received in our community.

Coconut Chocolate Chip Meltaways are everything you could want in a cookie.
These cookies simply dissolve in your mouth.
If you enjoy coconut and chocolate together, these cookies are right up your alley!
Every mouthwatering bite is irresistible!
Here’s what I did.
I used these ingredients.
Soften butter. Add to a mixing bowl.
Add granulated sugar, powdered sugar, eggs, vanilla extract, cream of tartar, baking soda and salt.
Add oil.
Mix with an electric mixer until ingredients are smooth.
Add unbleached all-purpose flour. Bleached flour toughens baked goods. Add coconut and chocolate chips.
Stir with a wooden spoon until ingredients are very thoroughly combined.
Roll cookie dough into golf ball-sized balls.
Roll balls of dough in granulated sugar until well-covered.
Place cookie dough on greased baking sheet pans several inches apart.
Bake cookies at 350 degrees about 12-15 minutes. Rotate cookie sheets on oven racks after 8 minutes of baking time. (My cookies took 18-19 minutes to bake completely.)
Dig in and eat!

COCONUT CHOCOLATE CHIP MELTAWAYS
(My own concoction)
Coconut Chocolate Chip Meltaways
Equipment
- 3 18×26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 large wooden spoon
- 1 small bowl
- measuring cups
- measuring spoons
Ingredients
- 1 cup salted butter softened
- 1 cup canola oil or avocado oil (if you want a healthier oil)
- 1 cup granulated sugar
- 1 cup powdered sugar
- 2 large eggs
- 5 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1 tsp. cream of tartar
- 1 tsp. baking soda
- 1 tsp. sea salt
- 2 tsp. pure vanilla extract
- 2 cups sweetened coconut
- 24 oz. bag semi-sweet chocolate chips
- 3/4 cup granulated sugar to roll the cookies in
Instructions
- Combine butter, oil, granulated sugar, confectioners’ sugar, eggs, baking soda, cream of tartar, salt and vanilla extract in a large mixing bowl.
- Mix with an electric mixer until creamy and smooth.
- Stir in flour, coconut and Chocolate Chips with a wooden spoon until mixture is thoroughly mixed.
- Shape cookies into golf ball-sized balls.
- Roll in granulated sugar to coat thoroughly.
- Put 3" apart on cookie sheets that have been sprayed with cooking spray.
- Bake at 350°for 12-15 minutes.
- Rotate cookie sheets on oven racks after 8 minutes of baking time.
- Cool.
