Cinnamon Oatmeal Cookies
I love Oatmeal Cookies. They’re thicker in texture and so delicious. Add some Cinnamon Chips and they’re even better! Cinnamon Oatmeal Cookies are so mouthwatering and irresistible. Sit down with a glass of milk. I guarantee you won’t be able to stop at one–unless you’re highly disciplined!

Back in January I baked several cookies with coconut so I could use up excess Christmas baking pantry goods. Those cookies included Coconut Meltaways, Coconut Chocolate Chip Meltaways, Butterscotch Oatmeal Cookies and these Cinnamon Oatmeal Cookies. All of the cookies were wonderful. And if you enjoy coconut as much as I do, you’ll drool over each one. 🙂
Cinnamon Oatmeal Cookies include Cinnamon Chips, oatmeal, coconut and pecans. They’re actually a pretty hearty cookie–very filling and satisfying. Especially since I make them pretty large to begin with. I used a large cookie scoop and by the time the cookies expand while baking, they’re 3-4″ in diameter. Now that’s my kind of cookie.
These delectable cookies are perfect for tailgating parties, backyard barbecues, soccer or gymnastics practice or just for family snacks. Fill up the cookie jar and watch your kids swoon over these jewels. Yum.

It’s time to grab a bite!
Here’s what I did.
I used these ingredients.
Soften butter. Add to a large mixing bowl with granulated sugar, packed brown sugar, eggs, baking powder, baking soda, salt and pure vanilla extract.
Cream ingredients with an electric mixer until smooth.
Add unbleached all-purpose flour (bleached flour toughens baked goods). Add oatmeal, coconut, pecans and cinnamon chips.
Stir very well to combine.
Scoop out dough with a large cookie scoop–about 7/8 full.
Place dough on greased cookie sheet pans.
Bake at 350 degrees about 17-22 minutes. Rotate cookie sheets on oven racks after 9 minutes of baking time. (My cookies took about 18-19 minutes to bake completely).
Serve!
Cinnamon Chips, coconut, pecans and oatmeal bake up into one perfect cookie!

CINNAMON OATMEAL COOKIES
(My own concoction)
Cinnamon Oatmeal Cookies
Equipment
- 2 18×26" cookie sheet pans
- 1 electric mixer
- 1 large mixing bowl
- 1 wooden spoon
- 1 nut chopper if nuts are not previously chopped
- 2 wire cooling racks
- 1 spatula
- measuring cups
- measuring spoons
Ingredients
- 2 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. sea salt
- 1 cup salted butter softened (2 sticks)
- 1 cup granulated sugar
- 1 cup light brown sugar packed
- 2 large eggs
- 1 tsp. pure vanilla extract
- 2 cups old-fashioned oatmeal dry
- 1 cup sweetened coconut
- 1 cup pecans or walnuts, chopped (measure after chopping)
- 20 oz. bag cinnamon chips (two 10-ounce bags)
Instructions
- Preheat oven to 350°F.
- Grease two large cookie sheets.
- Set aside.
- In a large mixing bowl, mix together the butter, brown sugar, granulated sugar, eggs, vanilla, baking powder, baking soda and salt.
- Blend well with an electric mixer until smooth.
- Stir in flour, coconut, oatmeal, cinnamon chips and pecans until thoroughly mixed.
- Press cookie dough into a ¼ cup scoop using a scant measure (about 7/8 fulll).
- Press firmly or the dough will crumble when you drop the scoopfuls of cookie dough onto a cookie sheet.
- Space cookies 2 to 3 inches apart on greased baking sheets.
- Bake for 17 to 22 minutes or until lightly browned and just set.
- Rotate cookie sheets on oven racks after 9 minutes of baking time.
- Transfer to wire racks to cool completely.
