Most of the time when someone thinks of kielbasa or smoked sausage, they automatically think “pork.” Not for this recipe. I used 100% beef for Sausage Apple Supper and it was so, so delicious. This scrumptious recipe uses sauerkraut, apples, potatoes, apple juice and a little onion along with the Beef Kielbasa. This is one of those lick-the-plate-clean recipes, it’s so good. Especially if you enjoy kielbasa and sauerkraut together. Yum.

I found a source for really good kielbasa without all the fillers, nitrates and chemicals most companies use to make smoked sausage. I’ve had several flavors including beef, roasted garlic, chicken with jalapeño and pork with cheese! Lots of different flavors and a healthier option than the main-line brands. I happened to be looking back through a bunch of my old Taste of Home cookbooks and saw A LOT of recipes using kielbasa with sauerkraut, cabbage or potatoes so I thought I would try out a couple. I ended up making about 12 recipes in the early spring and I still plan on making more later in the year!
I’ve made Sausage Apple Supper twice! The first time I used beef kielbasa with Idaho Gold potatoes. The second time I used roasted garlic (which is made with pork) and baby red potatoes (because those are the ingredients I had on hand). This skillet supper recipe was fantastic either way. But I advertise “beef” in this post for those who can’t or don’t eat pork.
This is actually a pretty basic recipe. It’s not overly seasoned (and it doesn’t need to be since the main ingredient is smoked sausage or kielbasa and they are already well-seasoned). It’s really simple. After sautéing the onion and sausage together, add the remaining ingredients and cook about 15-20 minutes longer. This quick and easy 30-minute meal is great for a weeknight supper especially if you’ve got sports games or practice on the schedule. The apples and apple juice make it more palatable for kids…you may even find they request it as they get older and their palates expand and increase.
Sausage Apple Supper turned out to be one of my top favorites of all the smoked sausage recipes I tried last spring. If you enjoy sauerkraut, you’ll love this recipe!

Melt butter in skillet. Add diced onion and beef kielbasa. Sauté a few minutes until heated through.

Meanwhile, drain sauerkraut; rinse well with water. Press any excess water out of the sauerkraut before using in recipe. Set aside.

Sausage Apple Supper
Equipment
- 1 large 12- or 14-inch skillet with lid
- 1 sharp knife
- 1 cutting board
- measuring cups
- measuring spoons
- 1 colander
Ingredients
- 1 lb. beef kielbasa or smoked sausage, cut in 1/4-inch pieces
- 1 medium Vidalia onion coarsely chopped (a sweet onion)
- 1 tsp. salted butter (teaspoon not tablespoon)
- 32 oz. jar sauerkraut rinsed well and drained
- 2 lbs. Yukon gold potatoes peeled and chunked (or unpeeled red potatoes, chunked)
- 2 large Honey Crisp apples or 3 medium Gala apples, cored and sliced in 1/4-inch wedges
- 1 cup apple juice
- 1/4 tsp. sea salt
- 1/4 tsp. ground black pepper
Instructions
- In a large skillet, over medium heat, sauté sausage and onion in butter.
- Sauté a minute or two until onions are tender.
- Top with the sauerkraut, potatoes and apples.
- Add the apple juice, salt and pepper.
- Stir well to combine.
- Bring ingredients to a boil.
- Reduce heat; cover skillet and simmer for 18-20 minutes, or until potatoes are fork tender.
