Spicy Grilled Chicken Thighs

We really enjoyed these Spicy Grilled Chicken Thighs. My husband grills a lot of meat on our grill especially during the summer months, but practically year round. So anytime I can find good ideas for grilling chicken, steaks, chops or fish, I’m willing to give it a try and he’s ready to toss it on the grill. Especially if I already have all the ingredients on hand. Granted, not everybody usually has grapefruit juice on hand, but I usually do. That’s the only odd ingredient that you may have to purchase in advance before making this delicious recipe.

Spicy Grilled Chicken Thighs are really pretty easy to whip up. This is a marinated chicken recipe, so you mix the marinade up a day before hand and then discard the marinade before grilling the next day. The chicken thighs come out well-seasoned and delightfully pleasing to the palate. While I served this entree with Sweet Potato Fries and some sautéed red cabbage, you can add anything you desire: corn-on-the-cob, potato salad, cole slaw, baked beans or whatever you prefer.
You can also grill leg quarters, chicken breasts, wings or legs with this simple recipe. It turns out great every time. The next time you’re grilling out with friends, give this taste chicken entree a try. You’ll be glad you did!
Spicy Grilled Chicken Thighs is a wonderful lip-smacking entree!
This chicken entree is great with just about any kind of side dish.
I served it with Sweet Potato Fries and sautéed Red Cabbage.
Here’s what I did.
I used these ingredients.
Combine seasonings in a bowl.
Add onions, garlic and grapefruit juice.
Add honey and low sodium soy sauce.
Stir ingredients to combine.
Measure out 1/2 cup of marinade for basting sauce; set aside.
Place chicken thighs in a large zip lock bag.
Add remaining marinade and seal bag. Turn over several times to coat chicken pieces well. Refrigerate overnight.
Before grilling: remove chicken pieces from zip lock bag. Shake off excess marinade. Set chicken thighs on a plate or platter and use reserved marinade to baste the chicken while grilling.
Place chicken on grill over medium heat. Baste with marinade. Grill chicken about 15-20 minutes before turning chicken over to other side. Baste with marinade frequently.
Turn chicken pieces over and continue grilling and basting with marinade until chicken juices run clear when pierced with a fork.
Remove chicken thighs to a platter to serve.

SPICY GRILLED CHICKEN THIGHS

Spicy Grilled Chicken Thighs
Equipment
- 1 gas grill or charcoal grill or electric grill
- 1 mixing bowl
- 1 large plate or platter
- measuring cups
- measuring spoons
- 1 sharp knife
- 1 cutting board
- 1 large zip lock bag
- 1 pastry brush
Ingredients
- 3/4 cup onion chopped
- 1/2 cup grapefruit juice
- 2 tbsp. olive oil
- 2 tbsp. tamari low sodium soy sauce (gluten free)
- 1 tbsp. honey
- 1 clove garlic finely minced
- 1 1/2 tsp. pink Himalayan sea salt or celtic sea salt
- 1 1/2 tsp. rubbed sage
- 1 1/2 tsp. dried thyme
- 1 tsp. ground allspice
- 1 tsp. garlic powder
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground nutmeg
- 1/4 tsp. cayenne pepper
- 1/4 tsp. ground black pepper
- 10 chicken thighs (bone-in, not skinned)
Instructions
- Combine first 15 ingredients in a small bowl.
- Measure out ½ cup of mixture and set aside for a basting sauce.
- Place chicken breasts in a gallon size zip-lock bag.
- Add remaining marinade to the bag.
- Zip lock and turn bag over several times so that all the of the sides of the chicken get good coverage with the marinade.
- Place bag of chicken on a plate and refrigerate overnight.
- Remove meat from refrigerator.
- Drain and discard marinade.
- Grill chicken, uncovered, over medium heat for approximately 15-20 minutes for each side.
- Baste chicken frequently with reserved marinade.
- Continue basting and turning chicken while grilling until juices run clear.
