Nectarine Berry Tossed Salad is a doozy of a recipe. No kidding. The salad is A+ and the salad dressing is also fantastic. I used wholesome ingredients in the recipe. The Honey Roasted Pecans are roasted in butter rather than bad seed oils. The salad includes plenty of fresh vegetables to add a little crunch, plus the fruity taste of nectarines, blueberries and raspberries. The Feta Cheese and Honey Roasted Pecans top it off wonderfully. The salad dressing includes Greek yogurt, nectarines, honey, avocado oil and apple cider vinegar. The flavors are totally delicious!
I took this salad along with some Banana Chip Muffins to an Empty Nester’s Ladies’ Luncheon back in September. Everyone raved over this delicious salad (and there were plenty of great salads to choose from!) It not only presents beautifully, it’s really one of the tastiest Tossed Salad recipes you’ll ever eat. The salad dressing does make a lot (more than a quart!), so you can cut the ingredients in half, if you desire. We like having extra to put on other salads throughout the week, but you can do as you desire.
You’ll notice I did not peel the nectarines before adding them to the blender. I scrubbed them well, but wanted to include the peels for more fiber and health. You’ll never even realize they’re in the recipe after being mixed up in your blender or Vitamix. For those who live in Texas, I found the Honey Roasted Pecans (roasted in butter) at HEB. They added terrific flavor also.
Peach and nectarine season is almost over. Rush out to the grocery store and get some immediately so you can enjoy them in this fabulous salad recipe!

I served this wonderful, festive and beautiful salad with Banana Chip Muffins.
Nectarine Berry Tossed Salad is a great recipe to take to salad luncheons or ladies’ luncheons.
Here’s what I did.
I used these ingredients for the salad.
Place salad greens in a mixing bowl.
Add cucumber, celery and red onion.
Wash raspberries in a colander.
Pat dry between layers of paper towels.
Toss raspberries on top of salad.
Wash blueberries in a colander. Pat dry between layers of paper towels.
Add blueberries to salad.
Slice nectarines and swish in a bowl with lemon juice.
Lay out nectarines on paper towels to drain and dry.
Arrange nectarine slices over top of salad bowl.
Sprinkle salad with Feta Cheese.
Top with Honey Glazed Pecans. Refrigerate until ready to serve.
I used these ingredients for the salad dressing.
Place avocado oil, honey and apple cider vinegar in a blender.
Add yogurt, poppy seeds and salt.
Add nectarine pieces.
Blend in blender about 30 seconds until smooth. Transfer ingredients to a cruet or salad dressing dispenser.Store in refrigerator until ready to serve.

7oz.honey toasted pecans(mine were toasted in butter)
1/2cupFeta cheesecrumbled, or more if desired
1/4cuplemon juiceor as needed
NECTARINE SALAD DRESSING:
2mediumnectarinespitted and sliced
2/3cupavocado oil
1/2cuphoney
1/4cupapple cider vinegar
1/2cup plain Greek yogurtor Icelandic yogurt, or sour cream
2tsp.poppy seeds
1/2tsp.pink Himalayan sea salt
Instructions
SALAD:
Remove stone from nectarines and cut in slices.
Pour lemon juice into a bowl.
Gently swish the nectarine slices in lemon juice until both sides are well covered.
Transfer nectarine slices to a paper towel-lined plate.
Pat dry with paper towels.
Set aside.
In a large salad bowl, layer salad greens, nectarine slices, blueberries, raspberries, cucumber, celery, onion and Feta cheese.
Toss honey toasted pecans on top.
Refrigerate until ready to serve.
NECTARINE SALAD DRESSING:
In a blender, combine sliced, peeled nectarines, avocado oil, honey, vinegar, sour cream or yogurt, poppy seeds and salt.
Puree about 30 seconds until ingredients are emulsified.
Serve with salad.
Yield: About one quart and one pint salad dressing.
Notes
NOTE: I have also used this recipe using 10-ounces salad greens instead of 16-ounces. It works quite well with more or less salad greens or spring mix.NOTE: For the salad dressing, you can either peel the necctarines or leave them unpeeled. It works well either way.NOTE: There is enough salad dressing for two batches of this salad. If you don’t want to use the remainder on other salads, you can reduce the ingredient amounts by half.
