Banana Chip Muffins
Banana Chip Muffins are absolutely divine! These lovely muffins are so scrumptious I’ve made them multiple times and with many variations! Every time I serve these muffins, I get rave reviews. They’re really THAT GOOD! The muffins are made with bananas, miniature chocolate chips and applesauce. They’re moist, sweet and just what the doctor orders when you have a “sweet tooth” craving.

Early last August, I made these delicious muffins for our Hostess Committee one Sunday morning at church. Everyone raved and raved over the texture, and the chocolaty taste of these muffins. One gal said they were the perfect consistency. I liked using miniature chocolate chips because they seem to permeate the muffins more so that every bite includes lots of chocolate. Overall, these muffins were so well received that they received an A+!
I made them again in early November last year for a youth fellowship at our church. That time I made several variations and all were gobbled up in no time. The basic recipe for these Banana Chip Muffins is really excellent. You can exchange fruit or other flavors of chips with really good results. We LOVED these muffins and they became one of my favorite “finds” for 2024.
Banana Chip Muffins are terrific for breakfast any day of the week. They freeze well so you can pull the muffins out individually if you so desire. They’re also marvelous for a holiday brunch or breakfast. I recommend them even for tailgating parties. No one will be able to stay out of them.

These muffins are terrific for a week day, company or holiday breakfast.
Each batch makes 16 regular-sized muffins so they’re great to bake up for a crowd.
Banana Chip Muffins are filled with bananas, applesauce and miniature chocolate chips.
Here’s what I did.
I used these ingredients.
Combine unbleached all-purpose flour (bleached flour toughens baked goods), granulated sugar, baking powder and salt in a large mixing bowl.
Stir well to combine; set aside.
Mash bananas on a plate with a fork.
In a medium mixing bowl, combine mashed bananas, oil, applesauce, eggs and half-and-half.
Whisk ingredients well to combine.
Add banana mixture to flour mixture.
Add miniature chocolate chips.
Stir ingredients just to combine. Don’t overmix the batter.
Spray 16 regular-sized muffin tins with cooking spray. Spoon muffin mixture into pans about 3/4 full.
Bake muffins at 400 degrees about 18 minutes, or until a toothpick inserted in center comes out clean.
Cool in pans 5 minutes before removing to a wire rack to cool completely. Transfer to serving platter to serve.

Banana Chip Muffins
Equipment
- 1 12-tin regular sized muffin pan
- 1 6 tin regular-sized muffin pan
- 1 large mixing bowl
- 1 medium mixing bowl
- 1 whisk
- 1 wooden spoon
- 1 plate
- 1 fork
- measuring cups
- measuring spoons
Ingredients
- 1 3/4 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1/2 cup granulated sugar
- 2 1/2 tsp. baking powder
- 3/4 tsp. sea salt
- 1 large egg
- 1/2 cup half-and-half (can substitute whole milk)
- 1/3 cup canola oil or avocado oil
- 1 cup ripe bananas mashed
- 1/2 cup unsweetened applesauce
- 1 cup miniature chocolate chips (semi-sweet)
Instructions
- Spray 16 regular-sized muffin tins with cooking spray; set aside.
- Preheat oven to 400°.
- Mash bananas on a plate with a fork; set aside.
- In a large mixing bowl, combine flour, granulated sugar, baking powder and salt.
- Set aside.
- In a medium mixing bowl, combine egg, half-and-half, oil, banana and applesauce.
- Whisk until well combined and the banana is broken up into very tiny pieces.
- Add wet ingredients to dry ingredients along with chocolate chips.
- Stir just to combine.
- Do not overmix the batter.
- Spoon batter into prepared muffin tins about three-fourths full.
- Bake at 400° for about 18 minutes, or until a toothpick inserted in center comes out clean.
- Cool muffins in pan for 5 minutes before removing to a wire rack to cool completely.
