
Mandarin Cashew Tossed Salad

Mandarin Cashew Tossed Salad is an absolutely delightful salad recipe. This one includes mandarin orange segments, fresh strawberries, blueberries, pineapple, cucumbers, cashews, some bell peppers and celery in a Honey Lime Dressing. The taste and texture is amazing. This scrumptious Tossed Salad is healthy, vegan and gluten free.

I was planning on making this salad for my son and daughter-in-law back at the end of April last year after the birth of their second child. But when I was describing the salad, my son informed me he didn’t like cashews in salad! I substituted a different salad for that menu, but I had already purchased all the ingredients for this one. I decided to make this salad up for us and served it with Herbed Chicken Quarters and Honey Roasted Chicken for dinner. We were very pleased with that easy and delicious meal!
The original salad recipe calls for the cashews to be tossed onto the salad right before serving (and after adding the salad dressing). I actually added the cashews to the salad beforehand because I needed to make it in advance. But if you need to keep the cashews crisp, by all means, add them right before serving.
Mandarin Cashew Tossed Salad is a terrific salad for company or even holiday dinners, but we sure enjoyed it for everyday lunches and dinner menus. If you enjoy Tossed Salads with fruit and a little bit of crunchiness, this one’s for you!

Mandarin Cashew Tossed Salad is utterly delightful!

This lovely Tossed Salad includes mandarin oranges, strawberries, blueberries, pineapple and honey roasted cashews.

This is a great side dish for company or holiday meals!

The Honey Lime Dressing bumps up the flavors in this delicious salad.
Here’s what I did.

I used these ingredients for the salad.

Combine spring mix and arugula in a large salad bowl.

Add celery and red onion.

Peel cucumber. With the tines of a fork, grate into the cucumber on all sides. Slice cucumber.

Add cucumber slices and red bell pepper.

Layer with blueberries, strawberries, fresh pineapple chunks and mandarin orange segments.

Sprinkle cashews over top (unless you need to refrigerate the salad for several hours).

I used these ingredients for the salad dressing.

Grate lime peel.

Combine all of the salad dressing ingredients in a blender.

Blend for about 20-30 seconds until ingredients are smooth.

Transfer salad dressing to a serving cruet or carafe.

Serve!

This festive and beautiful salad is healthy, vegan and gluten free.

The combination of fruits and cashews makes Mandarin Cashew Tossed Salad unbelievably good.

I served the salad with Herbed Chicken Quarters. It was a very light and refreshing meal.

MANDARIN CASHEW TOSSED SALAD

Mandarin Cashew Tossed Salad
Equipment
- 1 large salad bowl with tongs
- 1 grater
- 1 cutting board
- 1 vegetable peeler
- 1 fork
- measuring cups
- measuring spoons
- 1 blender
- 1 sharp knife
Ingredients
SALAD:
- 12 oz. pkg. spring mix
- 1 cup arugula
- 22 oz. can mandarin orange segments drained (two 11-ounce cans)
- 1 medium red bell pepper chopped
- 2 ribs celery diced
- 1 medium cucumber peeled and edges tined with a fork
- 1/4 cup red onion finely diced
- 1 cup honey-roasted cashews
- 2 cups fresh pineapple peeled and chunked
- 2 cups strawberries washed and sliced
- 1 cup blueberries washed
HONEY LIME DRESSING:
- 1/2 cup avocado oil
- 1/2 cup honey
- 1 tsp. ground mustard
- 1 tsp. lime peel grated
- 1/2 tsp. paprika
- 1/4 tsp. sea salt
- 1/8 tsp. ground white pepper
Instructions
SALAD:
- In a large salad bowl combine the lettuces.
- Layer with mandarin oranges, red bell pepper, celery, cucumber, red onion, pineapple, strawberries, blueberries and cashews.
- Refrigerate until ready to serve. (See note below).
HONEY LIME DRESSING:
- Grate enough lime peel to measure one teaspoon; set aside.
- Combine all of the dressing ingredients in a blender.
- Purée about 30 seconds until smooth.
- Drizzle salad dressing over individual salad plates or combine with salad.
- Serve.
