
Banana Butterscotch Muffins
This has become one of my favorite “basic” muffin recipes over the past year. It uses bananas, applesauce and miniature chocolate chips in the original recipe. But I’ve switched it around with so many different combinations, including these Banana “Butterscotch” Muffins that are exceptionally good.

I ended up using this basic muffin recipe with blueberries, with chocolate chips, with butterscotch chips and with cinnamon chips for one of our Youth nights one Wednesday evening in the late Fall of 2024. They were all a big hit but if you enjoy butterscotch flavors, this version will be a sensation in your house!
While I made these muffins in miniature muffin tins, the recipe works well in regular-sized muffin tins as well. You just adjust your cooking time….About 8-10 minutes for miniature muffins and 17-18 minutes for regular sized muffins at 400 degrees. Banana Butterscotch Muffins are irresistible and they’ll be gobbled up in no time.

Banana Butterscotch Muffins are irresistible!

Every bite is mouthwatering.

Butterscotch chips permeate the muffins adding such a rich flavor to these scrumptious muffins.

Banana Butterscotch Muffins are perfect for any breakfast menu.
Here’s what I did.

I used these ingredients.

Mash bananas on a plate with a fork. Set aside.

In a large mixing bowl, place unbleached all-purpose flour (bleached flour toughens baked goods). Add granulated sugar, baking powder and salt.

Stir ingredients well to combine; set aside.

In a medium mixing bowl, place mashed bananas, applesauce, egg, oil and half-and-half.

Whisk ingredients well to combine.

Add banana mixture to flour mixture.

Add butterscotch chips.

Stir ingredients just until moistened. Do NOT over mix the batter.

Spray miniature muffin tins with cooking spray. Spoon batter into prepared tins almost to the top.

Bake miniature muffins at 400 degrees for about 8-10 minutes – until a toothpick inserted in center comes out clean.

Allow muffins to cool in tins about 5-10 minutes before removing to wire racks to cool completely. Serve on platters.

Eat and enjoy!

BANANA BUTTERSCOTCH MUFFINS
(Recipe inspired from my Banana Chip Muffins)

Banana Butterscotch Muffins
Equipment
- 2 12-tin regular-sized muffin tins or 2 – 24-tin miniature muffin tins
- 1 large mixing bowl
- 1 medium mixing bowl
- 1 whisk
- 1 wooden spoon
- 1 plate
- 1 fork
- measuring cups
- measuring spoons
- 1 wire cooling rack
Ingredients
- 1 3/4 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1/2 cup granulated sugar
- 2 1/2 tsp. baking powder
- 3/4 tsp. sea salt
- 1 large egg
- 1/2 cup half-and-half
- 1/3 cup canola oil or avocado oil (or melted coconut oil)
- 1 cup banana mashed on a plate with a fork
- 1/2 cup unsweetened applesauce
- 1 cup butterscotch chips
Instructions
- Spray 16 regular-sized muffin tins with cooking spray; set aside.
- Preheat oven to 400°.
- Mash bananas on a plate with a fork; set aside.
- In a large mixing bowl, combine flour, granulated sugar, baking powder and salt.
- Set aside.
- In a medium mixing bowl, combine egg, half-and-half, oil, banana and applesauce.
- Whisk until well combined and the banana is broken up into very tiny pieces.
- Add wet ingredients to dry ingredients along with butterscotch chips.
- Stir just to combine.
- Do not overmix the batter.
- Spoon batter into prepared muffin tins about three-fourths full.
- Bake at 400° for about 18 minutes, or until a toothpick inserted in center comes out clean.
- Cool muffins in pan for 5 minutes before removing to a wire rack to cool completely.
- Yield: 16 regular-sized muffins.
