
Banana Toffee Muffins
I found a delicious Banana Chip Muffin recipe that I adore. I’ve made so many different variations of muffins with that basic recipe. This time I made the muffins with Heath English Toffee Bits and the burst of flavor from toffee was phenomenal. Yes, Banana Toffee Muffins are exquisite!

Last September I made a meal for a gal in our church for her office. She works for a non-profit and needed to provide a meal for about 15 people for a dinner meeting. I volunteered to make one for her. She wanted sort of a Mediterranean theme. She also wanted a healthy sort of meal and as many gluten free options as possible for some of the staff with Celiac. I ended up making Baked Italian Chicken and Potatoes with Herb Vinaigrette, Creamy Sweet Corn, Best Ever Greek Salad, Italian Herb Bread, Fresh Fruit, a Peach Angel Trifle and a Blueberry Angel Trifle.
We also had some neighbors who live just two doors down from us going through a really difficult time. The husband had been in and out of the hospital so I shared a little bit of that meal with them. Instead of providing the same desserts I made for the large group, however, I made up a batch of these Banana Toffee Muffins for their dessert. She raved and raved over that meal and especially couldn’t stay out of the muffins. Her husband has since passed on to glory, but I tried to bring meals or food to them every so often last fall to lessen the burden.
Banana Toffee Muffins are truly outrageously good. These muffins have a delectable texture and they’re made with applesauce and bananas which make for really moist muffins (not dry at all!) Plus, all those toffee chips make them explode with deliciousness. We loved them and hope you will too.

Every bite is good to the last crumb!

No matter how much I change up the recipe, these muffins turn out exceptionally well every time!
Here’s what I did.

I used these ingredients.

Place unbleached flour in a mixing bowl. (Bleached flour toughens baked goods). Add granulated sugar, baking powder and salt.

Stir ingredients to combine; set aside.

Mash bananas on a plate with a fork; set aside.

In a medium mixing bowl, combine mashed bananas, applesauce, egg, oil and half-and-half.

Whisk well, until banana is in very small pieces.

Add banana mixture to flour mixture.

Add Heath English Toffee Bits.

Stir just to combine; do NOT overmix the batter.

Spray muffin tins with cooking spray. Spoon batter into muffin tins about 3/4 to 7/8 full.

Bake at 400 degrees about 17-18 minutes until a toothpick inserted in center comes out clean.

Allow muffins to cool in pan about 10 minutes before removing to wire racks to cool completely. Serve.

These are great snacks to bring to sports practices. Pass them around to the other parents. Everyone will want one.

Pass them around at tailgating parties or potlucks too.

The bananas and the applesauce keep Banana Toffee Muffins moist.

BANANA TOFFEE MUFFINS
(Recipe inspired from my Banana Chip Muffins recipe)

Banana Toffee Muffins
Equipment
- 2 12-tin regular size muffin pans (you will not fill all of the muffin tins)
- 1 large mixing bowl
- 1 medium mixing bowl
- 1 wooden spoon
- 1 whisk
- 1 plate to mash bananas
- 1 fork to mash bananas
- measuring cups
- measuring spoons
Ingredients
- 1 3/4 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1/2 cup granulated sugar
- 2 1/2 tsp. baking powder
- 3/4 tsp. sea salt
- 1 large egg
- 1/2 cup half-and-half
- 1/3 cup canola oil or avocado oil, or melted coconut oil
- 1 cup ripe bananas mashed
- 1/2 cup unsweetened applesauce
- 1 cup Heath English Toffee Bits (Bits o' Brickle), 8-ounces
Instructions
- Spray 15 regular-sized muffin tins with cooking spray; set aside.
- Preheat oven to 400°.
- Mash bananas on a plate with a fork; set aside.
- In a large mixing bowl, combine flour, granulated sugar, baking powder and salt.
- Set aside.
- In a medium mixing bowl, combine egg, half-and-half, oil, banana and applesauce.
- Whisk until well combined and the banana is broken up into very tiny pieces.
- Add wet ingredients to dry ingredients along with Heath English Toffee Bits (or Bits o’ Brickle).
- Stir just to combine.
- Do not overmix the batter.
- Spoon batter into prepared muffin tins about three-fourths to 7/8 full.
- Bake at 400° for about 17-18 minutes, or until a toothpick inserted in center comes out clean.
- Cool muffins in pan for 5-10 minutes before removing to a wire rack to cool completely.
