
Pork Chops with Caraway Cabbage

I’m always looking for new recipes and ways to enjoy old favorites. Pork Chops with Caraway Cabbage is a tasty and delicious way to enjoy both pork chops and cabbage. In this recipe, you brown the chops, then cook the cabbage. Then both are combined and simmered until the chops are tender. The combination of flavorings is really scrumptious, especially if you enjoy cabbage.

I tried a lot of sauerkraut and cabbage recipes back in spring of 2024. Most were made with kielbasa or Polish sausage, but this one used pork chops instead. It’s a great way to use pork chops especially for those of you who grew up eating cabbage or sauerkraut from home gardens.
This recipe is relatively easy and pretty basic. I will only add that you may want to simmer the chops longer than the original time suggested — especially if your chops are thick. The extra cooking time will make them more tender. Thinner chops will not take as long to cook so keep that in mind while cooking. (No one wants to eat tough pork chops!) So cook the chops to desired doneness and enjoy!

This recipe is easy to whip up for nights when you need to get dinner on the table quickly.
Here’s what I did.

I used these ingredients.

Place oil in a very large skillet. Heat over high heat and add pork chops.

Turn chops over and brown the opposite side. Season pork chops with pepper to taste.

Remove chops to a dish and keep warm.

While pork chops are frying, dice onion and mince garlic; set aside.

Drain pork drippings. Add butter to skillet. Add onion.

Stir to combine and cook a minute or so, until tender.

Add cabbage, apple cider vinegar, caraway seed, garlic and salt.

Stir ingredients to combine.

Cook about 3-5 minutes until the cabbage wilts.

Add chops; cover with lid and simmer for 15-17 minutes, or as long as it takes for the chops to become tender.

Transfer to a serving platter to serve.

Pork Chops with Caraway Cabbage is a good entree to serve with fresh fruit.

This is a naturally gluten free meal.

Pork Chops with Caraway Cabbage
Equipment
- 1 large 12-inch or 14-inch skillet with lid
- 1 sharp knife to cut vegetables
- 1 cutting board
- measuring cups
- measuring spoons
Ingredients
- 4-6 pork loin chops (I used 5 boneless pork loin chops)
- 2 tbsp. avocado oil
- 1/3 tsp. ground black pepper
- 1 1/2 cups onion finely chopped
- 3 tbsp. salted butter
- 16 oz. bag cabbage shredded, with carrots (or 6 cups shredded cabbage)
- 2 cloves garlic finely minced
- 3 tbsp. apple cider vinegar or red wine vinegar
- 1 tsp. caraway seed
- 1/2 tsp. sea salt
Instructions
- In a large skillet over high heat, brown the pork chops in avocado oil; drain.
- Sprinkle chops with pepper; remove chops from skillet and set aside.
- In the same skillet, sauté onion in butter for 1-2 minutes, or until onion is tender.
- Add cabbage, garlic, vinegar, caraway seed and salt.
- Cook, stirring occasionally until the cabbage wilts.
- This will take approximately 3-5 minutes.
- Place chops on top of the cabbage.
- Cover skillet with lid.
- Simmer over low to medium heat for 15-17 minutes, or until the meat is tender and cooked through.
