
Strawberry Banana Muffins
Strawberry Banana Muffins are simply sensational! These luscious muffins include bananas, applesauce and lots of fresh strawberries. They bake up to perfection whether you make them as regular-sized muffins or miniatures. They’re ideal for company and guests and especially holiday breakfast or brunch menus. Your family will RAVE over these fantastic muffins!

I made up a batch of Strawberry Banana Muffins for our church’s youth group one Wednesday night for their weekly program. I added a few other flavors, including blueberry, chocolate chip, cinnamon chip & butterscotch. All of the muffins were gobbled down in no time. Truly, this basic recipe is fantastic. I’ve made it up with SO MANY different combinations and it works no matter what I add or change up.
These delectable muffins freeze well and are wonderful with your morning coffee. Set them out the night before to defrost and voila! You’ll have a delicious sweet treat to enjoy. Great snacks for tailgating parties or other sporting events too.

These muffins puff up beautifully and have excellent texture.

Strawberry Banana Muffins are great to serve for an office breakfast or brunch too.

Here’s what I did.

I used these ingredients.

Pour unbleached flour into a mixing bowl. (Bleached flour toughens baked goods). Add granulated sugar, baking powder and salt.

Stir ingredients to combine; set aside.

Mash bananas on a plate with a fork. I usually use two large or three small/medium bananas; set aside. If you end up with a little more than one cup of mashed bananas, that’s okay. Just toss it all into the bowl when mixing.

Place applesauce, oil, mashed bananas, egg and half-and-half in a medium mixing bowl.

Whisk ingredients to combine.

Add banana mixture to flour mixture.

Add strawberries.

Stir just to combine; don’t overmix the batter.

Spray muffin tins with cooking spray. Spoon batter into the muffin tins until almost full.

Bake at 400 degrees about 17-18 minutes, until a toothpick inserted in center comes out clean.

Allow muffins to cool in pan about 5-10 minutes before transferring to cooling racks to cool completely. Serve for breakfast, lunch or dinner!

STRAWBERRY BANANA MUFFINS
(Recipe adapted from my Banana Chip Muffins)

Strawberry Banana Muffins
Equipment
- 1 12-tin regular sized muffin pan
- 1 6 tin regular-sized muffin pan
- 1 large mixing bowl
- 1 medium mixing bowl
- 1 wooden spoon
- 1 whisk
- 1 colander
- 1 sharp knife to dice strawberries
- measuring cups
- measuring spoons
Ingredients
- 1 3/4 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1/2 cup granulated sugar
- 2 1/2 tsp. baking powder
- 3/4 tsp. sea salt
- 1 large egg
- 1 cup half-and-half
- 1/3 cup canola oil or avocado oil
- 1 cup ripe bananas mashed, (2 large or 3 medium)
- 1/2 cup unsweetened applesauce
- 1 1/2 cups strawberries washed, hulled and diced
Instructions
- Spray 16 regular-sized muffin tins with cooking spray; set aside.
- Preheat oven to 400°.
- Mash bananas on a plate with a fork; set aside.
- In a large mixing bowl, combine flour, granulated sugar, baking powder and salt.
- Set aside.
- In a medium mixing bowl, combine egg, half-and-half, oil, banana and applesauce.
- Whisk until well combined and the banana is broken up into very tiny pieces.
- Add wet ingredients to dry ingredients along with strawberries.
- Stir just to combine.
- Do not overmix the batter.
- Spoon batter into prepared muffin tins almost full.
- Bake at 400° for about 18 minutes, or until a toothpick inserted in center comes out clean.
- Cool muffins in pan for 5 minutes before removing to a wire rack to cool completely.
- Yield: 16 regular-sized muffins, or 72 miniature sized muffins.
