
Banana Cinnamon Muffins
Banana Cinnamon Muffins are outrageously good! These delicious muffins use Cinnamon Chips to bump up the luscious cinnamon flavor. Applesauce and bananas keep the muffins moist, but the cinnamon keeps these muffins “lively!” We loved them.

Last fall I made an assortment of muffins for our Youth Group one Wednesday night. Those included Banana Chip Muffins, Banana Butterscotch Muffins, Blueberry Banana Muffins, Strawberry Banana Muffins and Mint Chocolate Fudge Muffins. They were thoroughly pampered with so many different choices of muffins to select from. All the muffins were amazing to the taste buds and all were based off the same basic recipe–with just a few alterations here and there.
Some of the muffins I made in regular-sized muffin pans. But a lot of them were made in small miniature muffin pans which are more manageable and easy to handle when you’re teenagers on the go! Regardless, the cinnamon chips really hit the spot and are a great add-in for these muffins.
If you need some muffins for a breakfast buffet or brunch menu, or for a holiday or company breakfast, these muffins are terrific. Every bite will have you drooling. 🙂

Banana Cinnamon Muffins will surely cure every sweet tooth craving!
Here’s what I did.

I used these ingredients.

Mash bananas on a plate and set aside.

In a large mixing bowl, pour unbleached all-purpose flour (bleached flour toughens baked goods). Add sugar, salt and baking powder.

Stir to combine and set aside.

In a medium-sized mixing bowl, combine applesauce, bananas, oil, egg and half-and-half.

Whisk thoroughly to combine; try to break up the banana into very small pieces.

Add the liquid ingredients to the dry ingredients.

Add cinnamon chips.

Stir only to combine; be careful not to overmix the batter or the muffins will get tough.

Spray muffin tins with cooking spray. Fill each miniature muffin tin completely full.

Bake miniature muffins at 400 degrees for about 10-11 minutes, until a toothpick inserted in center comes out clean. Cool in pan about 5-10 minutes before removing to wire racks to cool completely.

Serve for a company or holiday breakfast!

The miniature size of these Banana Cinnamon Muffins make them easy to serve at tailgating parties.

BANANA CINNAMON MUFFINS
(Recipe adapted from my Banana Chip Muffins recipe)

Banana Cinnamon Muffins
Equipment
- 3 miniature muffin pans 24 slots to each pan or a total of 72 miniature muffins
- 1 large mixing bowl
- 1 medium mixing bowl
- 1 wooden spoon
- 1 whisk
- 1 plate
- 1 fork
- measuring cups
- measuring spoons
- 3 wire cooling racks
Ingredients
- 1 3/4 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1/2 cup granulated sugar
- 2 1/2 tsp. baking powder
- 3/4 tsp. sea salt
- 1 large egg
- 1/2 cup half-and-half
- 1/3 cup canola oil or avocado oil, or melted coconut oil
- 1 cup ripe banana mashed
- 1/2 cup unsweetened applesauce
- 1 cup cinnamon chips
Instructions
- Spray 16 regular-sized muffin tins with cooking spray; set aside.
- Preheat oven to 400°.
- Mash bananas on a plate with a fork; set aside.
- In a large mixing bowl, combine flour, granulated sugar, baking powder and salt.
- Set aside.
- In a medium mixing bowl, combine egg, half-and-half, oil, banana and applesauce.
- Whisk until well combined and the banana is broken up into very tiny pieces.
- Add wet ingredients to dry ingredients along with cinnamon chips.
- Stir just to combine.
- Do not overmix the batter.
- Spoon batter into prepared muffin tins until full.
- Bake at 400° for about 10-11 minutes, or until a toothpick inserted in center comes out clean.
- Cool muffins in pan for 5-10 minutes before removing to a wire rack to cool completely.
- Yield: 16 regular-sized muffins or 72 miniature muffins.
