
Magic Strawberry Cobbler
Magic Strawberry Cobbler is an awesome recipe! My husband loves fruity desserts and this one is particularly good. This layered dessert has a bottom layer of strawberries and sugar. Then it’s topped with a crust layer, followed by a sugar-cornstarch topping with boiling water. It’s pretty easy to whip up and tastes extraordinarily delectable–especially if you enjoy cobbler desserts!

I’ve made a lot of these cobblers with assorted fruit, including peach, raspberry, blueberry, cherry and pear. I made Magic Strawberry Cobbler for a family in our church that had just given birth to a baby. I served it with a Pork Chop Supper and some of our favorite Homemade Bread. I also made a couple more of the cobblers for us!
This is a terrific summer dessert–especially for the Fourth of July celebrations, Memorial Day or Labor Day. But strawberries are available all year long now so you can whip up this cobbler anytime you’re in the mood for something with strawberry flavor. 🙂 Add a scoop of ice cream and it’s even better!

Magic Strawberry Cobbler is wonderful–especially with a dollop of ice cream on top!

The bottom layer is strawberries (and sugar), the crust layer is on top.

Fresh out of the oven is one of the best ways to eat this delicious, fruity cobbler.

Whether you eat Magic Strawberry Cobbler with ice cream, or without, it’s an easy and terrific dessert for the summer holiday season.
Here’s what I did.

I used these ingredients, plus water.

Wash strawberries in a colander.

Slice and hull strawberries and put in a 9×9″ glass baking dish.

Sprinkle 1/4 cup granulated sugar over top. If desired, sprinkle a teaspoon of vanilla extract or a teaspoon of almond extract over top.

In a medium mixing bowl, combine softened butter, 3/4 cup granulated sugar and pure vanilla extract.

Mix with an electric mixer until combined.

Add half-and-half, unbleached all-purpose flour (bleached flour toughens baked goods), salt and baking powder.

Beat with an electric mixer again until well combined.

Spoon flour layer over top of strawberries in baking dish and smooth the top.

Place 1/2 cup granulated sugar in a small bowl. Add cornstarch.

Stir really well with a fork or whisk to combine.

Spoon sugar-cornstarch mixture evenly over top of the crust layer. Slowly pour boiling water over top of sugar layer trying to get even coverage and so that no dry spots remain.

Here, the water has been gently poured over top. If desired, place dish on a cookie sheet pan to catch any drips while baking.

Bake at 375 degrees for 40-45 minutes.

Serve hot out of the oven with ice cream, if desired. Or allow the cobbler to cool before serving.

Every spoonful is wonderful.

(My own concoction)

Magic Strawberry Cobbler
Equipment
- 1 9×9" glass baking dish
- 1 sharp knife
- 1 cutting board
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 small bowl
- 1 whisk or fork
Ingredients
- 4 cups fresh strawberries washed, sliced and hulled (about 1 1/2 lbs.)
- 1/4 cup granulated sugar
- 1/2 cup salted butter softened, (1 stick)
- 3/4 cup granulated sugar
- 1 tsp. pure vanilla extract (see note below)
- 3/4 cup half-and-half
- 1 cup unbleached all-purpose flour (bleached flour toughens baked goods)
- 1/8 tsp. sea salt
- 1 tsp. baking powder
- 1/2 cup granulated sugar
- 1 tbsp. cornstarch
- 1/4 cup boiling water
Instructions
- Preheat oven to 375°.
- Wash strawberries in a colander; pat dry, hull and slice strawberries.
- Arrange strawberries in the bottom of a 9×9” glass baking dish.
- Sprinkle ¼ cup granulated sugar over top of berries.
- Beat 3/4 cup granulated sugar, butter and vanilla extract in a mixing bowl with an electric mixer until smooth.
- Add half-and-half, flour, salt and baking powder and continue mixing with mixer until creamy.
- Spread batter evenly over the strawberries in baking dish.
- In a small bowl, combine ½ cup granulated sugar and cornstarch.
- Sprinkle the sugar mixture evenly over the batter.
- Pour the boiling water over top.
- Make sure all of the sugar is covered with water and no dry spots remain.
- Bake at 375° for 40-45 minutes.
- Cool slightly before serving.
- Serve with ice cream or non-dairy whipped topping.
