
Zesty Gazpacho Salad

Zesty Gazpacho Salad is one of those wonderful recipes that I found in one of my old cookbooks this past year. I decided to give it a try and I’m so glad I did. It’s quick and easy to whip up, light and refreshing to eat, along with being healthy, low calorie, gluten free and vegan! A win-win for sure.

I made a bereavement meal for some friends back in early May. The woman who died had been part of our weekly Grandmas in Prayer group and had passed away suddenly and unexpectedly. One day she was in the ER with pain and three weeks later she was gone.
They asked for a meal train so I signed up on one of the earlier dates. I made my favorite stand-by recipe: Pork Chop Supper. A one-dish meal with red potatoes and baby carrots. The seasonings in that dish make it really special. I added our favorite Home-Baked Bread, Zesty Gazpacho Salad and Texas Chocolate Cupcakes (with Caramel Frosting!) The family loved the meal and I was glad I could do such a small thing to help lighten their load during such a difficult time.
As stated above, Zesty Gazpacho Salad is really easy to put together. The salad includes zucchini, tomatoes, fresh corn, avocados and green onions. The homemade salad dressing uses only six ingredients including Picante sauce and fresh, minced parsley. Seriously, this is an easy-peasy recipe and it tastes amazing. The combination of flavors in the salad dressing are perfect for the vegetables in the salad.
If you’re looking for a light, refreshing and easy summertime salad, I can’t recommend Zesty Gazpacho Salad enough. 🙂

Zesty Gazpacho Salad is an easy-peasy recipe you’ll enjoy eating!

This light, refreshing summer salad includes fresh corn, tomatoes, zucchini, avocados and green onions.

The salad dressing uses only six ingredients including picante sauce and fresh, minced parsley.
Here’s what I did.

I used these ingredients. You can substitute frozen, thawed corn if desired.

If using fresh corn: shuck corn and boil 5 minutes; cool, cut down corn-on-the-cob with a knife to use in recipe. Place corn, chopped tomatoes and chopped zucchini in a mixing bowl.

Add diced green onions and chopped avocados.

Mince parsley and place in a small bowl.

Add avocado oil, lemon juice, ground cumin and garlic salt.

Add picante sauce.

Stir or whisk to combine.

Add salad dressing to vegetables in mixing bowl.

Stir well to combine.

Transfer salad to a serving bowl and garnish with fresh parsley, if desired. Refrigerate at least 4 hours before serving.

This Tex-Mex salad is delightful for Backyard Barbecues and grilling out with friends.

Corn, tomatoes, zucchini, avocados and green onions taste fantastic in this salad.

Zesty Gazpacho Salad
Equipment
- 1 large mixing bowl
- 1 small bowl
- 1 serving bowl
- 1 sharp knife
- 1 cutting board
- measuring cups
- measuring spoons
- 1 wooden spoon or whisk
Ingredients
- 2 medium zucchini chopped (I used 3 small zucchinis)
- 2 large tomatoes chopped (I used 1 1/2 extra large tomatoes)
- 2 small avocados peeled, pitted, chopped
- 1 cup fresh or frozen corn (thawed) I used two ears corn-on-the-cob, (see note below)
- 1/2 cup green onions sliced thinly
- 1/2 cup picante sauce
- 2 tbsp. fresh parsley minced
- 2 tbsp. lemon juice
- 1 tbsp. avocado oil
- 3/4 tsp. garlic salt
- 1/4 tsp. ground cumin
Instructions
- In a medium mixing bowl, combine zucchini, tomatoes, avocado, corn and onions.
- In a small mixing bowl, combine remaining ingredients; mix well.
- Pour salad dressing over zucchini mixture.
- Toss well to coat vegetables.
- Cover and refrigerate for at least 4 hours before serving.Â

You can serve this pretty salad in parfait dishes.

I like avocados in just about any kind of salad, but they’re really excellent in Gazpacho!
