
Apple Snack Squares
I love trying out new recipes that really just knock your socks off! Apple Snack Squares was one of those recipes. These ooey, gooey cookies include not only apples, but walnuts and butterscotch chips. They are really sensational. If you’re one of those folks who enjoy butterscotch flavor, it’s doubly delicious with apples.

Back in mid-May, we drove to Palestine (Texas) to visit some friends who were leaving the state to move closer to grandkids. We had known them the entire time we’ve lived in Texas (29 years). In fact, he was one of the first people we met when we came down to the Dallas area on our initial house-hunting search. Both of us have moved on to different churches over the years but we stayed in touch.
I wanted to bring them a parting gift, so I made up a batch of these scrumptious jewels. They loved them. I had just a very tiny taste and thought they were certainly something special. While the recipe called for only three cups of apples, I ended up using five cups so the blondies were extra moist, extra gooey, and extra delicious! I also increased the amount of butterscotch chips from one cup to two cups and added a cup on top of the bars before baking. Yummy!
Apple Snack Squares are perfect for tailgating parties, potlucks or Backyard Barbecues. Apples are plentiful any time of the year these days, so you don’t have to wait until fall baking to try out this dynamite recipe. You’ll enjoy this dessert down to the very last crumb.

Apple Snack Squares are ooey, gooey and delicious.

If you enjoy apples and Butterscotch Chips, you’ll love this dessert.

I used “Envy” apples, but any sweet apple will work in this recipe.

Because there are so many apples in the recipe, these brownies are really moist.
Here’s what I did.

I used these ingredients.

Pour unbleached flour into a mixing bowl (bleached flour toughens baked goods). Add granulated sugar, baking powder, salt and cinnamon.

Stir ingredients well to combine; set aside.

In a medium mixing bowl, combine, eggs and oil.

Whisk ingredients until smooth.

Add egg mixture to flour mixture.

Add apples, walnuts and one cup of the Butterscotch Chips.

Stir ingredients well to combine.

Spread mixture into a greased 9×13″ glass baking dish. Sprinkle remaining cup of Butterscotch Chips evenly over top off batter.

Bake at 350 degrees for 35-40 minutes (if using three cups apples) and about one hour and twenty minutes (if using five cups apples!)

Allow dessert to cool in pan completely before cutting into squares. Transfer to serving dishes to serve.

Apple Snack Squares
Equipment
- 1 9×13" glass baking dish
- 1 large mixing bowl
- 1 wooden spoon
- 1 medium mixing bowl
- 1 whisk
- 1 sharp paring knife
- 1 cutting board
- 1 nut chopper (if nuts are not previously chopped)
- measuring cups
- measuring spoons
Ingredients
- 2 cups granulated sugar
- 2 large eggs
- 3/4 cup avocado oil or vegetable oil
- 2 1/2 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1 1/2 tsp. baking powder
- 1/2 tsp. sea salt
- 1 tsp. ground cinnamon
- 3 cups apples peeled and diced (I used Envy, but any sweet apples like Fuji, Gala or Honey Crisp will work) (see note below)
- 1 cup walnuts chopped (measure after chopping)
- 2 cups butterscotch chips
Instructions
- Preheat oven to 350°.
- Grease a 9×13” glass baking dish; set aside.
- In a large bowl, combine flour, granulated sugar, baking powder, baking soda, salt and cinnamon.
- Stir well to combine; set aside.
- In a medium mixing bowl, beat eggs and oil.
- Add liquid ingredients to dry ingredients along with apples, 1 cup butterscotch chips and walnuts.
- Stir with a wooden spoon about 3 minutes until mixture is thoroughly mixed.
- (Mixture is very thick).
- Spread mixture into prepared baking dish.
- Sprinkle remaining butterscotch chips on top.
- Bake in preheated oven for 35-40 minutes until golden brown and a toothpick inserted in center of baking dish comes out clean.

- Cool bars completely before cutting into squares.
