
Fiesta Corn Salad

Fiesta Corn Salad is a fabulous side dish for backyard barbecues especially on hot, summer days. This quick and easy salad recipe includes canned corn, cucumber, tomatoes, celery, bell peppers, green onions and a fat-free Italian dressing. I added fresh dill, basil and oregano to add a little more zest to the original recipe. It was delightful!

We had a Pool Party get-together for our church community group back in late July. There was so much great food brought in by everyone, including grilled chicken, hamburgers, sausage and brisket! There were also plenty of side dishes. I brought this salad along with a Caprese Salad and both of those salads were gobbled up quickly! I made Peach Cupcakes with Caramel Frosting for dessert. Did I say we had lots of great food to choose from??? Yessiree, young and old alike enjoyed all that fun food.
The one thing I like about this salad was it is really easy to prepare. It’s not always easy to find fat-free Italian salad dressing, but Wishbone offers one. Since I didn’t have time to whip up my own salad dressing, that fit the bill perfectly. I had this salad ready in about 20 minutes and then refrigerated it until we were ready to attend the party. The Fiesta Corn Salad and the Caprese Salad present so beautifully that I had several of the folks wanting to dig into the salads before they got their meat!
Corn Salads are terrific for potlucks and whenever you’re grilling out with friends. If you want ease and convenience, Fiesta Corn Salad is it!

Fiesta Corn Salad is delightful to serve for company or crowds.

This easy-peasy side dish is vegan and gluten free.

It uses a lot of fresh vegetables and herbs. If you prefer to use fresh corn, simply blanch the corn-on-the-cob for about 5 minutes; cool and cut down for the recipe.

Here, the Fiesta Corn Salad is served with Greek Style Marinated Chicken Thighs and fresh cantaloupe.
Here’s what I did.

I used these ingredients.

Drain corn and place in a large mixing bowl. Add chopped tomatoes, bell peppers, green onions, celery and cucumber.

Add Fat-Free Italian Dressing (this is Wishbone).

Season with salt and pepper.

Transfer to a serving bowl and sprinkle with minced basil, oregano and dill weed. Cover and refrigerate several hours before serving.

The fresh dill weed, oregano and basil season Fiesta Corn Salad wonderfully.

This light and refreshing salad is terrific for hot, summer days when you don’t want to heat up your kitchen.

Fiesta Corn Salad pairs wonderfully with Greek Style Marinated Chicken Thighs and fresh cantaloupe!

The crunchiness from the vegetables make this a scrumptious salad to enjoy.

Fiesta Corn Salad
Equipment
- 1 large mixing bowl
- 1 serving dish
- 1 wooden spoon
- 1 sharp knife
- 1 cutting board
- 1 colander to drain corn
- measuring cups
- measuring spoons
Ingredients
- 16 oz. can whole kernel corn drained (or 2 ears fresh corn, blanched before using)
- 1 cup fresh tomato diced
- 1 cup cucumber diced
- 1/2 cup celery diced
- 1/2 medium red bell pepper diced
- 1/2 medium green bell pepper diced
- 2 medium green onions diced
- 1/2 cup Fat-Free Italian Dressing
- salt and pepper to taste
- 1 tsp. fresh oregano minced, or more, if desired
- 1 tsp. fresh basil minced, or more, if desired
- 1 tsp. fresh dill weed minced, or more, if desired
Instructions
- Combine corn, tomatoes, cucumber, celery, bell peppers and green onions in a salad bowl.
- Drizzle with Fat Free Italian Dressing or olive oil and balsamic vinegar.
- Add salt and pepper to taste.
- Sprinkle fresh herbs over top.
- Stir well to combine.
- Cover and refrigerate salad for several hours before serving.
- Sprinkle with additional fresh basil, oregano and dill weed before serving, if desired.

Fiesta Corn Salad is a nice salad to serve for company too. Serve it in parfait dishes! 🙂

Using a store-bought fat-free Italian salad dressing makes this recipe come together really quickly.
