Spinach Apple Salad is heavenly! This lovely salad includes both Romaine lettuce and spinach, along with apples, raisins, sweet Vidalia Onions and a delicious homemade salad dressing that features applesauce. It’s quick and easy to toss together, but it must not be assembled until you’re ready to eat. It’s a great salad to make for weeknight dinners when you’re waiting for meat to be grilled or baked in the oven. You can toss the salad together in a jiffy.

I initially made this salad and served it with Greek Style Marinated Chicken Thighs. Then I had a little leftover and decided to serve it with steak and fruit as well. It’s a great side dish for any type of main dish. I found that I preferred to have about twice as much Romaine lettuce as spinach, as the ingredients seemed to blend better that way.
Spinach Apple Salad is really tasty. The salad dressing ingredients blend so well with the salad. We always have applesauce on hand (along with the other ingredients), so it’s quite easy to toss together at the last minute. Spinach Apple Salad is not only gluten free, but healthy, low calorie, sugar free and vegan. Enjoy.

Here’s what I did.

I used these ingredients.

Place Romaine lettuce and spinach in a serving bowl. I de-stem the spinach. I also think this is better with twice as much Romaine as spinach.

Toss lettuces together.

In a medium-sized mixing bowl, place applesauce and apple cider vinegar.

Add avocado oil and Stevia powder (or sugar).

Whisk ingredients to combine.

Add raisins, diced Vidalia or sweet onions, and diced apple.

Stir ingredients to combine; let ingredients stand for 10 minutes.

Right before serving, add apple mixture to spinach mixture.

Toss to coat well; serve immediately.

Spinach Apple Salad has delightful flavor.

The sweet Vidalia Onions actually make this salad taste mouthwatering.

I served this salad originally with Greek Style Marinated Chicken Thighs, then I served it with steak! Yum.
