
Peach White Chocolate Muffins
Peach White Chocolate Muffins are really some of the most delectable muffins you’ll ever eat! These lovely muffins include fresh peaches, white chocolate chips, applesauce, bananas, cinnamon and nutmeg. The flavors work wonderfully well together, and every bite is “knock-your-socks-off” good!

I made these muffins for one of our monthly Hostess Committee workers one Sunday morning at church. They were gone in a jiffy! Everyone enjoyed the combination of flavors since peaches and white chocolate are an unbeatable combination. I have made so many variations of these muffins that I’ve lost count, but one thing is for certain: the muffins always turn out sensationally well! Peach White Chocolate Muffins were no exception.
If you want a fantastic breakfast or brunch item for your menu give these muffins a try. If you can’t find fresh peaches, substitute canned sliced peaches that are diced down into smaller pieces. Those will work fine too. Enjoy.

Peach White Chocolate Muffins are sensational!

Every bite is chocked full of peaches and white chocolate chips. Yum!

These are terrific for a weekend, company or holiday breakfast or brunch menu.

If you can’t find fresh peaches, simply substitute canned, sliced peaches and dice them down into smaller pieces.
Here’s what I did.

I used these ingredients.

Place unbleached flour in a mixing bowl. (Bleached flour toughens baked goods). Add granulated sugar, cinnamon, nutmeg, baking powder and salt.

Stir ingredients well to combine; set aside.

Mash bananas on a plate with a fork; set aside.

In a medium mixing bowl, combine applesauce, bananas, egg and oil.

Add half-and-half.

Whisk ingredients well until banana is broken up into very small pieces.

Add banana mixture to flour mixture.

Add white chocolate chips and peaches.

Stir just to combine; do not overmix the batter.

Spray regular sized muffin tins generously with cooking spray. Spoon batter into tins about 3/4 to 7/8 full.

Bake at 400 degrees about 17-18 minutes, or until a toothpick inserted in center comes out clean. Cool in pans about 10 minutes before removing to a wire rack to cool completely.

Transfer muffins to a serving platter.

Peach White Chocolate Muffins are also marvelous for tailgating parties.

PEACH WHITE CHOCOLATE MUFFINS
(My own concoction)

Peach White Chocolate Muffins
Equipment
- one 12-tin regular sized muffin pan
- one 6 tin regular-sized muffin pan (or use a 12-tin but only fill six slots)
- 1 large mixing bowl
- 1 medium mixing bowl
- 1 whisk
- 1 wooden spoon
- 1 plate
- 1 fork
- 1 paring knife
- 1 cutting board
- measuring cups
- measuring spoons
Ingredients
- 1 3/4 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1/2 cup granulated sugar
- 2 1/2 tsp. baking powder
- 3/4 tsp. sea salt
- 1 tsp. ground cinnamon
- 1/8 tsp. ground nutmeg
- 1 large egg
- 1/3 cup avocado oil or other oil
- 1/2 cup half-and-half
- 1 cup banana mashed (2 large or 3 small bananas)
- 1/2 cup unsweetened applesauce
- 1 cup peaches diced, peeled, pitted
- 1 cup white chocolate chips NOT vanilla chips or premiere white baking chips
Instructions
- Spray 18 regular-sized muffin tins with cooking spray.
- Set aside.
- Preheat oven to 400°.
- Mash bananas on a plate with a fork; set aside.
- In a large mixing bowl, combine flour, granulated sugar, baking powder, salt, cinnamon and nutmeg.
- Set aside.
- In a medium mixing bowl, combine egg, half-and-half, oil, banana and applesauce.
- Whisk until well combined and the banana is broken up into very tiny pieces.
- Add wet ingredients to dry ingredients along with diced peaches and white chocolate chips.
- Stir to combine, but don’t overmix the batter.
- Spoon batter into prepared muffin tins about three-fourths to 7/8 full.
- Bake at 400° for about 17-18 minutes, or until a toothpick inserted in center comes out clean.
- Cool muffins in pan for 5-10 minutes before removing to a wire rack to cool completely.
