
Greek Style Marinated Chicken Thighs

I so enjoy finding new, tasty ways to grill and/or marinate chicken. Greek Style Marinated Chicken Thighs is so easy to make and so delicious to the taste buds! The marinade includes lemon juice, oregano, olive oil and red wine vinegar, and a few other ingredients including Dijon mustard. I usually marinate the chicken about 24 hours before we toss the chicken on the grill. Yum, yum.

My son and daughter-in-law have made this recipe for us several times. They usually make it with chicken breasts that are pounded with a meat tenderizer and then marinated. But I wanted to make it with chicken thighs instead (since that’s my favorite piece of meat). I thought it turned out so well.
I’ve made it several times and I think we enjoy it more each time. I took it for our church’s Community Group potluck in early September and served it with Garlic Mashed Potatoes, Creamy Sweet Corn and a loaf of our favorite Homemade Bread. I also served it with Spinach Apple Salad at a later date. Another time I served it with Rutabagas Romanoff! Everyone raved over the potatoes and said they were the best they’d ever eaten! Almost everyone took home some of the homemade bread, and one guy carried out several extra pieces of the chicken! He thought the marinade was fantastic. So did we!
If you’re looking for a fantastic marinade for chicken, this one is easy and can be whipped up in about 5 minutes. Toss everything in a large jumbo ziplock bag and you’re good to go. Toss on the grill the next day and enjoy.

These chicken thighs take only about 5 minutes to prepare the marinade; refrigerate overnight and then toss the chicken on the grill!

Greek Style Marinated Chicken Thighs is fantastic served with Greek Salad and fruit.
Here’s what I did.

I used these ingredients.

Place olive oil, apple cider vinegar and Dijon mustard in a small mixing bowl.

Add lemon juice, minced garlic, oregano, cumin, salt and pepper.

Whisk ingredients to combine.

Place chicken in a jumbo sized ziplock bag.

Add marinade; seal bag and turn over several times to distribute the marinade. Refrigerate about 24 hours.

Remove chicken from refrigerator; drain and discard marinade. Toss on hot grill.

Grill over medium-high heat (about 400 degrees) about 10 to 15 minutes per side.

Remove chicken to serving platter to serve.

We have served this chicken several times and everyone always raves over it! It’s really good with Greek Salad as a side dish.

Fresh oregano and lemon juice bring out tasty Greek flavors that really enhance the chicken.

GREEK STYLE MARINATED CHICKEN THIGHS

Greek Style Marinated Chicken Thighs
Equipment
- 1 gas grill or electric grill, or charcoal grill
- 1 jumbo-sized zip-lock bag or two gallon-sized zip-lock bags
- 1 medium mixing bowl
- 1 whisk
- measuring spoons
- grill utensils as needed
Ingredients
- 10 bone-in chicken thighs (skin left on)
- 3 tbsp. olive oil
- 1 tsp. Dijon mustard
- 2 tbsp. red wine vinegar
- 2 tbsp. garlic finely minced
- 2 tbsp. lemon juice
- 1 tsp. dried oregano
- 1/4 tsp. ground cumin
- 1 tsp. Celtic sea salt
- 1/2 tsp. ground black pepper
Instructions
- Combine olive oil, mustard, vinegar, garlic, lemon juice, oregano, cumin, salt and pepper in a small mixing bowl.
- Whisk well to combine.
- Place chicken thighs in a jumbo-sized zip-lock bag.
- Pour marinade over top of the chicken in the bag, scraping the bowl to get all of the marinade into the bag.
- Seal the bag and turn over multiple times until the marinade completely covers all of the chicken in the bag.
- Refrigerate 20-24 hours, if possible.
- To grill chicken: Remove chicken from bag and discard marinade.
- Grill over medium-high heat (about 400°) until cooked through—approximately 10-15 minutes per side, or until chicken reaches an internal temperature of 165°.
- Remove to platter to serve.
