
Southern Apple Cobbler
I grew up eating a lot of “Down-Home” style food. Southern Apple Cobbler is one of those comfort food recipes that soothe every appetite. Add a dollop of ice cream and it’s even better! This dessert is made in three layers: an apple layer, a topping layer, and a cinnamon-sugar layer sprinkled over top. Yum. Yum!

I made this delectable recipe for my son’s birthday in late August. We try to never go empty-handed, and even though there was plenty of food, it’s always nice to have a yummy dessert as well. So I actually made two of these desserts at the same time. I made one of the cobblers for them and kept one for us. 🙂
The nice thing about this dessert is it freezes well too. Since the recipe makes a large 9×13″ pan, we froze several pieces to eat later and so did my daughter-in-law. I will only add that this old-fashioned dessert is really good hot out of the oven and with ice cream melting on top! But it’s also good served plain and at room temperature.
This recipe is good with any kind of apple, although I prefer using a sweet apple rather than bitter apples like Granny Smiths. Apples are plentiful especially in the fall, so this is a fantastic dessert to whip up for family or company. Enjoy.

Here’s what I did.

I used these ingredients for the apple layer.

Peel and core apples; slice each apple in 8 wedges. Toss apples into a mixing bowl.

Add granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, cloves and lemon juice.

Toss ingredients well to combine.

Spray a 9×13″ glass baking dish with cooking spray. Toss apples into baking dish and bake at 400 degrees for 10 minutes. Remove from oven.

Meanwhile, prepare topping. I used these ingredients, plus boiling water.

Place unbleached all-purpose flour in a mixing bowl (bleached flour toughens baked goods). Add brown sugar, granulated sugar, salt and baking powder.

Stir ingredients well to combine.

Cut in cold butter with a pastry blender.

Keep cutting butter into flour mixture until coarse crumbs form.

Add boiling water.

Stir well to combine.

Remove hot apples from oven and dollop topping mixture over top of hot apples.

I used these ingredients for the cinnamon-sugar topping.

Add cinnamon to sugar in a small bowl.

Stir really well to combine.

Sprinkle cinnamon-sugar mixture over top of topping layer as evenly as possible and return dish to oven.

Bake at 400 degrees an additional 30 minutes or until done.

Serve Southern Apple Cobbler warm with ice cream, if desired.

This is a great dessert to take to potlucks for backyard barbecues because it serves a lot!

SOUTHERN APPLE COBBLER
(My own concoction)

Southern Apple Cobbler
Equipment
- 1 9×13" glass baking dish
- 1 large mixing bowl
- 2 wooden spoons
- 1 cutting board
- 1 paring knife
- 1 medium mixing bowl
- measuring cups
- measuring spoons
- 1 small bowl
- 1 spoon
Ingredients
APPLE LAYER:
- 8 cups apples peeled, sliced in 8 wedges per apple
- 1 tsp. lemon juice
- 1 tsp. ground cinnamon
- 1/8 tsp. ground nutmeg
- 1/8 tsp. ground cloves
- 2 tsp. cornstarch
- 1/4 cup granulated sugar
- 1/4 cup light brown sugar packed
TOPPING LAYER:
- 2 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar packed
- 2 tsp. baking powder
- 1 tsp. sea salt
- 3/4 cup salted butter cold (1 1/2 sticks or 12 tbsp.)
- 1/3 to 1/2 cup boiling water
CINNAMON-SUGAR TOPPING LAYER:
- 3 tbsp. granulated sugar
- 1/2 tsp. ground cinnamon
Instructions
APPLE LAYER:
- Preheat oven to 400°.
- Pare apples and slice each peach in 8 wedges.
- Place in a large mixing bowl.
- Add sugars, corn starch, lemon juice and spices and stir to combine.
- Spray a 9×13” glass baking dish with cooking spray.
- Pour apple mixture into prepared baking dish.
- Bake for 10 minutes.
- Remove from oven.
- Meanwhile, prepare topping.
- Dollop or crumble topping over top of hot apples.
- Sprinkle with Cinnamon-Sugar Topping.
- Bake an additional 30 minutes or until apples are cooked through when tested with a fork, and topping is golden brown.
TOPPING LAYER:
- Mix flour, sugars, baking powder and salt with a wooden spoon until well combined.
- Cut in butter with a pastry blender until coarse crumbs form.
- Add just enough boiling water to moisten the dough and stir just until moistened.
- Dollop or crumble the topping evenly over top of hot, apple mixture.
- Sprinkle with Cinnamon-Sugar Topping.
- Bake at 400° an additional 30 minutes or until done.
CINNAMON-SUGAR TOPPING LAYER:
- Combine sugar and cinnamon in a small bowl, stirring well.
- Sprinkle sugar topping evenly over regular topping before baking.
- Bake as directed above.
- Serve warm with ice cream, if desired
