Cracked Out Green Bean Casserole
Oh my gosh! Cracked Out Green Bean Casserole is epic! This is SOOOO much better than the classic Green Bean Casserole recipes. This “made from scratch” recipe has Ranch dressing mix and a homemade sauce. It also uses French fried onions and toasted bread crumbs that bring out wonderful flavors in this casserole. Yes, it is the perfect holiday side dish too.

Back in April, we ate dinner at one of our neighbor’s homes. Linda is a Cajun cook from Louisiana and the spread she put on that night to feed us was second to none. She fed us like kings and queens. On top of that, I got a peek at her cookbook and started begging recipes from her. I’ve already made six or seven of those recipes and plan to make many more. Linda’s recipes are gold!!!
We hosted our Friday night care group for a Christmas party about a week and a half ago. John picked up a spiral cut ham on sale really cheap. So I made our favorite Apricot Glazed Ham. I also served Linda’s Sweet Potato Casserole with Coconut Praline Topping, That Good Salad, and this terrific casserole. Believe you, me, that was comfort food extraordinaire. On top of that I made my Black Forest Dream Dessert. Yes, you could say we enjoyed a wonderful meal that night.
That doesn’t even include all the food everyone else brought. It wasn’t exactly a “Pig Fest,” but we did chow down on some terrific food. This “Cracked Out” version of green beans was a real hit with everyone. It’s so, so much better than the original version. This green bean dish was terrific with Apricot Glazed Ham and Sweet Potato Casserole with Coconut Praline Topping.
If you want comfort food, this will do it!
Here’s what I did.
I used these ingredients.
Over low to medium heat, melt butter. Add flour.
Whisk to combine.
Add milk.
Whisk to combine. Add Ranch Dressing mix.
Whisk again until Ranch Dressing Mix is fully incorporated. Reduce heat and continue cooking over low heat until mixture thickens.
Add salt and pepper to taste.
Meanwhile, place a small amount of oil in a skillet. Add onions and garlic.
Stir ingredients. Cook until tender, about 3-5 minutes.
Transfer onion mixture and drained green beans to Ranch sauce mixture.
Stir gently, just until combined.
Pour green bean mixture into a greased 7×12″ baking dish. (You can also use a square 9×9″ baking dish, if preferred).
Top with toasted bread crumbs. (I chose not to toast them).
Sprinkle French Fried Onions on top.
Bake, uncovered, at 350 for 30 minutes.
Serve as a side dish for your favorite holiday or company meal.

CRACKED OUT GREEN BEAN CASSEROLE
(Recipe adapted from Linda Stiles, Ovilla, TX)
Cracked Out Green Bean Casserole
Equipment
- 1 sauce pan
- 1 wooden spoon
- 1 whisk
- 1 skillet
- 1 7x12" glass baking dish
- measuring cups
- measuring spoons
- 1 sharp knife to cut vegetables
Ingredients
- 30 oz. can whole green beans drained (two 15-ounce cans)
- 1 1/2 tbsp. unsalted butter
- 3 tbsp. all-purpose flour
- 1 1/2 cups 2% milk
- 1 oz. pkg. Ranch dressing mix
- 1 tbsp. avocado oil as needed (I used about 1 tbsp. avocado oil)
- 1 onion chopped
- 1 clove garlic minced
- 1/2 tsp. Salt and pepper to taste
- 1/3 cup bread crumbs toasted, if desired
- 3 oz. can French-fried onions or about half a can
Instructions
- To make the white sauce: Melt butter in saucepan.
- Stir in flour, stirring constantly.
- Using wire whisk, stir in milk.
- Bring to a boil and cook until it thickens.
- Stir in Ranch dressing mix.
- Preheat oven to 350 degrees.
- In a skillet, using small amount of oil, add onion and garlic, cooking until tender.
- Stir green beans, onion mixture and salt and pepper into white sauce.
- Spoon mixture into a greased 7x12” glass casserole dish.
- Top with bread crumbs.
- Cover with onion rings.
- Bake uncovered for 30 minutes.
