Fruit Cole Slaw is absolutely delightful. This is one of the most delicious takes on Cole Slaw I’ve ever eaten. This one uses the traditional Cole Slaw mix. It also includes blueberries, bananas, strawberries and a reduced-sugar can of fruit cocktail. The salad dressing uses Greek yogurt and other healthy ingredients. This is a healthy and delicious recipe for cole slaw that can’t be beat.

I happen to love Cole Slaw recipes. I’ve got a Hawaiian version with pineapple. I’ve got one made with apple, cranberries and almonds. I’ve also got a KFC copycat recipe that’s terrific. These recipes with fruit are extra special. They really liven up a traditional or classic style cole slaw. This Fruit Cole Slaw is no exception. I really like the fact that the salad dressing is made with Greek yogurt rather than mayonnaise. It’s got just enough bite to keep it interesting without overwhelming the salad ingredients.
I served Fruit Cole Slaw back in March to our Friday night care group. I made it as a side dish for a new Beef Noodle Vegetable Casserole and some Red Lobster Cheddar Bay Biscuits. That was one delicious meal. I got wonderful reviews about this salad. Several people wanted to take home leftovers. 🙂
This is a fantastic side salad for the upcoming summer holidays like Mother’s Day, Memorial Day, Father’s Day, Fourth of July or Labor Day. It’s great for potlucks. It’s so unusual you won’t have to worry about having multiple versions of it. It’s not fun going to potlucks and finding five pans of baked beans or 20 versions of potato salad. 🙁 I always want to bring something different. This recipe fits the bill.

Fruit Cole Slaw is sensational.
All the fruit revs up a traditional cole slaw and makes it spectacular.
The salad dressing uses Greek yogurt and other clean eating ingredients.
We served Fruit Cole Slaw with Beef Noodle Vegetable Casserole and Red Lobster’s Cheddar Bay Biscuits.
Here’s what I did.
I used these ingredients.
Place plain Greek yogurt in a mixing bowl. Add honey and distilled white vinegar.
Add lemon juice.
Add pink Himalaya sea salt and black pepper.
Whisk to combine.
In a very large mixing bowl, place cole slaw mix.
Add blueberries, sliced strawberries and drained, reduced sugar fruit cocktail.
Stir ingredients to combine.
Refrigerate until ready to serve.
To serve: Add salad dressing. Garnish with banana slices.
Fruit Cole Slaw is one delicious side salad.
This salad is healthy, low calorie, gluten free and clean eating.
I served Fruit Cole Slaw with Beef Noodle Vegetable Casserole and Red Lobster’s Cheddar Bay Biscuits. Everyone raved over that meal. 🙂

FRUIT COLE SLAW
(Recipe adapted very slightly from Taste of Home)
Fruit Cole Slaw
Equipment
- 1 large serving bowl
- 1 sharp knife to cut vegetables and fruit
- 1 small mixing bowl
- 1 whisk
- measuring cups
- measuring spoons
- 1 wooden spoon
Ingredients
- 8 oz. container plain Greek yogurt or Icelandic yogurt
- 1/2 cup honey
- 1/4 cup white vinegar
- 3 tbsp. lemon juice
- 1/2 tsp. pink Himalayan sea salt
- 1/8 tsp. ground black pepper
- 15 oz. can reduced sugar fruit cocktail drained
- 2 cups blueberries
- 1 cup fresh strawberries sliced
- 1 medium ripe banana sliced (I used two)
- 14 oz. pkg. coleslaw mix
Instructions
- In a small bowl, combine yogurt, honey, white vinegar, lemon juice, salt and pepper with a whisk.
- Refrigerate until ready to assemble salad.
- Combine the fruit cocktail, blueberries and strawberries in a salad bowl.
- Stir in coleslaw.
- Refrigerate until ready to assemble salad.
- Just before serving, combine coleslaw mixture, banana and salad dressing ingredients.
- Serve immediately.
