I get asked frequently by working moms for simple, easy recipes. They want recipes that don’t take a lot of time and don’t take a lot of ingredients. These cookies start with a lemon cake mix. All you add are eggs, oil and the white chocolate chips. SUPER EASY. Plus, they’re absolutely delicious. I add a whole bag of white chocolate chips so the cookies are pretty rich. No one can stop at just one. 🙂
My husband has given several containers of these cookies out as gifts. They have received very high marks. Most people can’t believe something so tasty only has 4 ingredients. 🙂 Every now and then I have to restock our freezer because he likes to give cookies out all the time. Recipes like this can be made up so quickly that I don’t have to spend my whole day baking cookies.

Lemon White Chocolate Cookies are great for office parties and baby showers, too.
Here’s what I did.
I used these ingredients.
Place Lemon cake mix into a mixing bowl. Add eggs and oil.
Stir ingredients to combine.
Add white chocolate chips. NOT vanilla chips.
Stir again to combine.
Roll cookie dough into balls and place on greased cookie sheets. (I had to keep my hands slightly moist while rolling).
Bake at 350 for about 13-15 minutes or until done. Rotate racks every 6-7 minutes during cooking time.
Yes, I could have eaten all of these. But I didn’t. 🙂

LEMON WHITE CHOCOLATE COOKIES
(My own concoction)
Lemon White Chocolate Cookies
Equipment
- 2 18x26" cookie sheet pan
- 1 large mixing bowl
- 1 wooden spoon
- measuring cups
- 1 spatula
Ingredients
- 15.25 oz. box Lemon Cake Mix
- 1/3 cup canola oil or vegetable oil (or even avocado oil)
- 2 large eggs
- 11.25 oz. pkg. white chocolate chips NOT vanilla chips
Instructions
- Preheat oven to 350 degrees.
- Combine cake mix, oil and eggs.
- Stir in white chocolate chips.
- Spray cookie sheets with cooking spray.
- Roll cookies into balls or scoop cookie dough with a scoop and place on prepared baking sheets.
- Bake at 350° for 13-15 minutes or until done.
- Rotate cookie sheets on oven racks every seven minutes while baking.
- Cool completely.
