Seven Layer Tex-Mex Dip

Seven Layer Tex-Mex Dip is incredible. This irresistible appetizer is filled with everything I love in a dip. The bottom layer has refried beans with diced jalapenos. The jalapenos add just a little bit of heat to the dip. It’s not excessive. The second layer has my favorite Chunky Homemade Guacamole.

I wanted to make this recipe from scratch. But if you don’t have the time or inclination, feel free to substitute a pre-made guacamole from the store. The third layer consists of sour cream, mayonnaise and Taco Seasoning. I made my own taco seasoning that doesn’t have preservatives or any junk added. But again, you can use store-bought taco seasoning if you prefer. The fourth layer is sharp cheddar cheese. The fifth layer is tomatoes. The sixth layer is olives. Finally, the seventh layer is green onions.
I made several of these appetizers a month ago. John and I were putting some new Saint Augustine sod down in parts of our backyard. We have Cedar trees that suck up all the water out of the ground. Grass has a hard time growing under them. We decided to swap out the Bermuda grass for Saint Augustine. It seems to be heartier and thriving. Anyway, my neighbor came over to help us. We had six pallets of grass we laid down. He would help pull the grass off the pallets and load it in our large wagon. Then John hauled the wagon with our riding lawn mower out to our back yard. It was exhausting. Especially for people of our ages.
I didn’t want our neighbor’s hard work to go unappreciated, so I asked him what kind of treat I could bake him. He said he really doesn’t do sweets that much. He preferred dip and chips. So I quizzed him and asked him about the main ingredients for this recipe. Did he like guacamole? Check. Did he like refried beans? Check. What about jalapenos? Check. What about Tex-Mex? Check. What about a Layered Dip Tex-Mex style with chips? Check.
I had been thinking about making this recipe for a few months. So, I decided to make one up for him and one for our college group at church. We hosted them a couple of Sundays ago and Seven Layer Tex-Mex Dip was on the menu. Everyone ooohed and aaahhhhed over this amazing appetizer. Our neighbor wouldn’t share any of his with his family! I made them in large pie tart dishes. But his daughter came over to our college gathering so she got to have some anyway.
So many of the young adults that came drooled over this delicious dip. I ate a small bowl of it all by myself! I had NONE left over. The nice thing about this appetizer is it’s actually pretty healthy (compared to many). This one is gluten free. Because it’s from scratch it takes longer, but it is a bit healthier. However, if you’re short on time, this recipe can be made rather quickly by substituting pre-purchased guacamole & taco seasoning. It won’t be quite as good as my Homemade Guacamole, but it will still be good. 🙂
This is a great appetizer for any kind of tailgating or office party, potluck or backyard barbecue. For that matter, this is a great dip and chips to leave out for your family to eat on Saturdays or Sundays. It’s one of those recipes you just keep grazing on. This layered dip will get your motor going!
Seven Layer Tex-Mex Dip is a great appetizer to eat when watching sports on TV.
Here’s what I did.
I used these ingredients.
Remember, if you want to make the recipe simpler, then you can purchase store-bought guacamole and taco seasoning. In that case, you will not use all these ingredients.
For the 1st layer: Spread a can of refried beans with diced jalapenos in the bottom of two separate tart dishes, pie plates, or whatever dish you wish to serve this in. If using a 9×13″ glass baking dish, you will spread both cans over the bottom of the dish.
For the second layer: Peel avocados and remove pits. Mash up the avocados with a fork, pastry blender or potato masher. Whichever works for you.
I used grape tomatoes for this part of the recipe. Add tomatoes and lemon juice.
Add sea salt, diced red onion and cilantro leaves.
Stir ingredients to combine.
Spread the Chunky Homemade Guacamole over top of the refried beans layer in each dish.
For the third layer: Place sour cream, mayonnaise and Homemade Taco Seasoning in a mixing bowl.
Stir ingredients to combine.
Spread the taco seasoning layer over top of the guacamole layer in each dish.
Layer 4: add sharp shredded cheddar cheese. Layer 5: Add diced tomatoes. (I used the roma tomatoes here). Layer 6: Add drained, sliced olives.
Layer 7: Add diced green onions. Refrigerate until ready to serve.
Seven Layer Tex-Mex Dip is a dream.
This dip is perfect for tailgating parties, potlucks and backyard barbecues. Just add tortilla chips and enjoy.
We gobbled down this appetizer in no time. 🙂

SEVEN LAYER TEX-MEX DIP
(My own concoction)
Seven Layer Tex-Mex Dip
Equipment
- 2 9-inch torte pans or round baking dishes or one 9x13" glass baking dish
- 1 sharp knife to cut vegetables
- 3 wooden spoons
- 3 small mixing bowls
- 1 pastry blender
- measuring cups
- measuring spoons
Ingredients
- 30 oz. can refried beans with jalapenos or chilies (two 15-ounce cans)
- 3 large avocados ripe, peeled, pitted and chopped
- 2 roma tomatoes diced (or 2/3 to 1 cup of diced grape tomatoes)
- 1/2 cup fresh cilantro chopped
- 1/4 cup red onion diced
- 1/2 tsp. sea salt
- 2 tbsp. lemon juice (I used the juice from half of a large lemon)
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 pkg. taco seasoning mix (or homemade taco seasoning)
- 2.25-oz. can black ripe olives sliced, drained
- 1 bunch green onions and tops chopped (I used 5)
- 8 oz. pkg. sharp cheddar cheese shredded
- 3-4 roma tomatoes chopped
Instructions
- LAYER 1: Spread beans in the bottom of a 9x13” baking dish or two 9 or 10-inch torte pans.
- LAYER 2: Mash avocados with a pastry blender until smooth.
- Sprinkle with lemon juice.
- Add 2 Roma tomatoes, diced, cilantro, red onion and salt.
- Stir thoroughly.
- Spread over refried bean layer.
- LAYER 3: Combine sour cream, mayonnaise, and taco seasoning mix.
- Spread over avocado layer.
- LAYER 4: Sprinkle with cheddar cheese.
- LAYER 5: Sprinkle with remaining chopped tomatoes.
- LAYER 6: Sprinkle with sliced black olives.
- LAYER 7: Sprinkle with sliced green onions.
- Chill in refrigerator and garnish with tortilla chips around the edge of the dish, if desired.
