Butter Pecan White Chocolate Cookies
Butter Pecan White Chocolate Cookies are awesome. Especially if you enjoy pecans. This 5-ingredient recipe is so quick and so easy. It starts with a Butter Pecan Cake Mix. Simply add oil, eggs, white chocolate chips and pecans. That’s it. The taste is incredibly good. The cookie itself is soft but the pecans give it added crunch. If you like nuts in your cookies, this recipe is fantastic.

I have so many different cake mix cookie recipes. Almost all of them include white chocolate chips. NOT vanilla chips. I have Strawberry cookies and bars. I have Funfetti Cookies and bars. I have Gingerbread. I have Carrot Cake cookies and bars. Pina Colada. Almond Joy. Even Cherry. I also have several Funfetti Cookies without white chocolate chips including Coconut, Chocolate and Red Velvet. I even have a gluten free version.
Cake mix recipes are wonderful. They’re incredibly quick and easy to make and turn out great every time. The cookies usually have a superb texture–soft and chewy. I think I like them the best because they’re just so incredibly easy. You don’t have to have a lot of ingredients on hand. Most of the recipes are only 4 or 5 ingredients. When you make as many cookies or brownies in bulk like I do, 4 or 5 ingredient recipes are terrific.
John gave these cookies out to some friends in Virginia a couple of weeks ago. I got high marks for how delicious they were. I am constantly stocking my freezers with containers of cookies or brownies because he likes to give them out so frequently. He knows I don’t mind baking or whipping something up on the fly. So every couple of months I try to make up 12-15 containers of cookies. Each container holds about 24 brownies or about 32-36 cookies. He’s asked me to make up some diabetic cookies, so I’m going to have to find some recipes for that soon.
If you enjoy the rich flavors of butter pecan and white chocolate, you’ll love this dessert. They are totally satisfying and you don’t have to spend an arm and a leg to make them. Plus, they’re just plain good… 🙂

These irresistible cookies are terrific for tailgating parties or potlucks.
Not everyone can eat nuts these days, but if you enjoy pecans, these cookies are fantastic.
Here’s what I did.
I used these ingredients.
Pour Butter Pecan Cake Mix into a mixing bowl. Add eggs and oil.
Stir ingredients to combine.
Add chopped pecans and white chocolate chips. NOT vanilla chips.
Stir ingredients to combine again.
Spray cookie sheets with cooking spray. Roll cookie dough into balls and place on prepared cookie sheets. (I had to keep my hands slightly moist while rolling).
Bake at 350 for 13-15 minutes or until done. Rotate racks every 6-7 minutes during baking time.
I could have eaten a whole stack of Butter Pecan White Chocolate Cookies.
These rich cookies are everything you desire in a dessert! 🙂

BUTTER PECAN WHITE CHOCOLATE COOKIES

Butter Pecan White Chocolate Cookies
Equipment
- 2 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 wooden spoon
- 1 nut chopper if nuts are not previously chopped
- 1 spatula
- measuring cups
- 1 whisk
Ingredients
- 15.25 oz. box Betty Crocker butter pecan cake mix 1 cup coarsely chopped pecans
- 1/3 cup canola oil or vegetable oil
- 2 large eggs
- 11.25 oz. pkg. white chocolate chips NOT vanilla chips
- 1 cup pecans coarsely chopped
Instructions
- Preheat oven to 350 degrees.
- Combine cake mix, oil and eggs in mixing bowl with whisk or wooden spoon.
- Stir in white chocolate chips and pecans.
- Spray cookie sheets with cooking spray.
- Roll cookies into balls or scoop cookie dough with a scoop and place on prepared baking sheets.
- Bake at 350° for 13-15 minutes or until done.
- Rotate cookie sheets on oven racks every seven minutes of baking time.
- Cool completely.

Have you tried using semi-sweet chocolate chips in the pecan cookies? I’m not a huge fan of white chocolate so I was just wondering. I will make them as your recipe suggests first before I might experiment. Thanks
