Cherry Chip Cookies
Cherry Chip Cookies are delightful. These luscious cookies start with a Cherry Chip Cake Mix. Toss in some fresh cherries and vanilla chips & you have a cookie that’s absolutely mouthwatering. Plus, this is a 5-ingredient recipe so it’s really pretty simple.

I received a 20-pound box of fresh, plump, desirable cherries from the Northwest Cherry Growers a couple of weeks ago. They asked me to blog about my experiences with their cherries again this year. I made ten desserts in all. This was the last one I made.
Cherries and vanilla chips work so wonderfully together. The vanilla chips add a lot more sugar to the recipe so these cookies are really rich and decadent. The convenience of a cake mix is also one of the reasons I like this recipe. The only time consuming thing is pitting the cherries. If you have a cherry pitter, then that obstacle is overcome as well.
I love cherry desserts and I have a ton of them on this blog. While everyone automatically thinks cobbler or pie, rarely do folks thing about cookies when using cherries. Even though most of my recipes use candied or maraschino cherries, I have several using fresh cherries as well.

Cherry Chip Cookies are an easy 5-ingredient cookie recipe.
Here’s what I did.
I used these ingredients.
Pour Cherry Chip Cake Mix into a mixing bowl. Add eggs and oil.
Stir ingredients to combine.
Add chopped cherries and vanilla chips.
Stir ingredients very gently to combine.
Roll dough into balls and place on greased cookie sheets. (I had to keep my hands slightly moist while rolling).
Bake at 350 for 13-15 minutes or until done.

CHERRY CHIP COOKIES
(My own concoction)
Cherry Chip Cookies
Equipment
- 2 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 wooden spoon
- 1 cherry pitter or sharp knife to pit cherries
- measuring cups
- 1 spatula
Ingredients
- 15.25 oz. box Betty Crocker Cherry Chip Cake Mix
- 1/3 cup canola oil or use avocado oil
- 2 large eggs
- 12 oz. pkg. vanilla chips or premiere white baking chips
- 1 cup fresh cherries pitted, diced, (dried thoroughly)
Instructions
- Preheat oven to 350°.
- Combine cake mix, oil and eggs.
- Gently stir in vanilla chips and cherries.
- Spray cookie sheets with cooking spray.
- Roll cookies into balls and place on prepared baking sheets.
- Bake at 350° for 13-15 minutes or until done.
- Rotate cookie sheets every 6-7 minutes.
- Cool completely.
