Southern Nectarine Cobbler
I have the most spectacular dessert for you today! Southern Nectarine Cobbler. Wow this dessert was so good I had all of our company drooling over it! Instead of peaches, this cobbler uses nectarines. It has a wonderful topping covered with cinnamon sugar. Yes, it was fantastic with ice cream and a little caramel sauce drizzled over top. 🙂

Last Friday I received a box of nectarines and peaches from the Washington State Fruit Commission. The fruit was delightful, but the nectarines were absolutely marvelous. Sweet, juicy, wonderful.
Full disclosure here: I have NEVER made anything with nectarines before. NEVER! I’ve eaten nectarines raw, but I’ve never cooked with them. I didn’t realize what I’d been missing out on! Nectarines are sensational cooked up in pie or cobbler. They taste like peaches but the skin on the fruit is thinner. It’s almost like the skin on a plum.
I got the box about 1 or 2 pm last week and decided to throw together a cobbler for dinner that night with our Friday night Bible study group. I think about 15 people tried the cobbler. Without exception, all of our group loved it. I kept asking everyone, “What did you think of it?” It was a winner with young and old alike. We served it with ice cream, although I ate my portion plain.
The next time you find nectarines in the store, you’ve got to make up this amazing Southern Nectarine Cobbler. I’m sure your family will drool over it just like ours did.

No kidding. This dessert will knock your socks off. It’s that good.
I thought this dessert was better than Peach Cobbler! Yum.
Here’s what I did.
I used these ingredients for the fruit filling.
Peel and slice nectarines. Place in a large mixing bowl.
Add sugar, brown sugar, cinnamon, nutmeg, lemon juice and cornstarch.
Stir ingredients to combine.
Place nectarine mixture in a greased 9×13″ glass baking dish. Bake at 400 degrees for 10 minutes. Meanwhile, make topping.
I used these ingredients for the topping, plus boiling water.
Place UNBLEACHED flour in a mixing bowl. (Bleached flour toughens baked goods). Add sugar, brown sugar, salt and baking powder.
Stir ingredients to combine.
Cut in butter with a pastry blender until coarse crumbs form.
This is what the mixture should look like.
Add boiling water.
Stir ingredients to combine. Set aside.
I used these ingredients for the cinnamon sugar topping.
Combine ingredients and set aside.
Remove nectarines from oven.
Dollop nectarines with topping.
Sprinkle cinnamon sugar over top.
Continue baking at 400 degrees another 30 minutes or until nectarines are cooked through and tender and topping is set.
Serve plain if desired.
Or top with ice cream.

SOUTHERN NECTARINE COBBLER
(My own concoction)
Southern Nectarine Cobbler
Equipment
- 1 9x13" glass baking dish
- 2 mixing bowls
- 2 wooden spoons
- measuring cups
- measuring spoons
- 1 sharp knife to pit, pare and slice nectarines
- 1 pastry blender
- 1 small bowl
Ingredients
COBBLER:
- 8 cups nectarines peeled, sliced
- 1 tsp. lemon juice
- 1 tsp. cinnamon
- 1/8 tsp. nutmeg
- 2 tsp. cornstarch
- 1/2 cup brown sugar packed
- 1/2 cup granulated sugar
TOPPING:
- 2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1/2 cup brown sugar packed
- 1/2 cup granulated sugar
- 2 tsp. baking powder
- 1 tsp. sea salt
- 1 1/2 sticks unsalted butter cold (3/4 cup or 12-tablespoons)
- 1/3 to 1/2 cup boiling water
CINNAMON SUGAR TOPPING:
- 3 tbsp. granulated sugar
- 1/2 tsp. cinnamon
Instructions
COBBLER:
- Preheat oven to 400°.
- Pare nectarines and slice.
- Place in a large mixing bowl.
- Add sugars, corn starch, lemon juice and spices and stir to combine.
- Spray a 9x13” glass baking dish with cooking spray.
- Pour nectarine mixture into prepared baking dish.
- Bake for 10 minutes.
- Remove from oven.
- Meanwhile, prepare topping.
- Dollop topping over top of hot nectarines.
- Sprinkle with Cinnamon Sugar Topping.
- Bake an additional 30 minutes or until nectarines are cooked through when tested with a fork, and topping is golden brown.
TOPPING:
- Mix flour, sugars, baking powder and salt with a wooden spoon until well combined.
- Cut in butter with a pastry blender until coarse crumbs form.
- Add boiling water and stir just until moistened; use only enough water to moisten dough.
- (This mixture is still moist. It is not like a crumb topping).
- Dollop topping over top of hot nectarine mixture.
- Sprinkle with Cinnamon Sugar Topping.
- Bake at 400° an additional 30-40 minutes or until done.
CINNAMON SUGAR TOPPING:
- Combine sugar with cinnamon.
- Sprinkle sugar topping evenly over regular topping before baking.

Because I have a big sweet tooth! However, I wouldn’t have eaten it all in one sitting. Perhaps I would have spread it out over a week or so. Still, I would have eaten the WHOLE thing. It was that good.
