I asked my husband to hunt the grocery store aisles the day after Halloween. His mission? To find cheap candy that I could make into Christmas cookies and for other holiday treats last year. I probably had a full 55-gallon trash can full of candies. Maybe more. 🙂
I tried Baby Ruth Cookies, Butterfinger Candy Bar Cookies and these delicious Reese’s Peanut Butter Cup Cookies. I made them for our annual Christmas Cookie Extravaganza 2019. We baked 5,800+ cookies and finished around the first week in December. It is finally January and I’m just now getting over all that holiday baking! We were exhausted baking that many cookies in about two weeks time.
Reese’s Peanut Butter Cup Cookies turned out to be some of our favorites. The texture was really wonderful. I had to try a few times to get it right. The candies have so much oil from the peanut butter and the chocolate that I had to work to get the consistency correct.
Even so, these cookies were a real winner with everyone. They’re also delicious treats for tailgating parties, potlucks or Christmas Cookie Exchanges. Not to mention, being a great way to use up leftover Halloween candy. 🙂

Here’s what I did.
I used these ingredients.
Place two sticks softened butter in a mixing bowl (not three like pictured here). Add eggs, sugar, brown sugar, baking soda, vanilla and salt.
Mix with an electric mixer until well blended.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add chopped miniature Reese’s Peanut Butter Cups.
Stir really well to combine. Mixture will be on the dryer side.
Roll dough into balls and place on cookie sheets that have been sprayed with cooking spray.
Bake at 350 for 13-15 minutes or until done. Rotate cookie sheets on racks every six minutes while baking. My cookies took between 18-20 minutes to cook completely.
Reese’s Peanut Butter Cup Cookies are wonderful for tailgating parties and potlucks.
These cookies made it into our annual Christmas Cookie Extravaganza 2019.

REESE’S PEANUT BUTTER CUP COOKIES
(My own concoction)
Reese's Peanut Butter Cup Cookies
Equipment
- 3 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 sharp knife to chop Reese's Peanut Butter Cups
- 1 spatula
Ingredients
- 1 cup unsalted butter softened (2 sticks)
- 1 1/2 cups brown sugar firmly packed
- 3/4 cup granulated sugar
- 3 large eggs
- 2 tsp. vanilla extract
- 4 1/2 cups UNBLEACHED all-purpose flour or possibly a little more, (bleached flour toughens baked goods)
- 1 1/2 tsp. baking soda
- 1 tsp. sea salt
- 3 cups miniature Reese's Peanut Butter Cups chopped
Instructions
- Preheat oven to 350°.
- Grease or spray large cookie sheets with cooking spray.
- In large bowl, combine butter, sugars, vanilla, eggs, salt and baking soda.
- Beat at medium speed with an electric mixer until fluffy.
- Stir in flour and Reese’s Peanut Butter Cups with a wooden spoon until well combined; this may take 4-5 minutes.
- Roll dough into balls and place on prepared cookie sheets.
- Bake for 12-14 minutes at 350 degrees, or until lightly browned.
- Rotate cookies on racks every six minutes through cooking time.
- Let cookies cool in pan for 5 minutes.
- Remove to wire racks to cool completely.

I made these for our office Christmas Party. They are very good. Not too bad in the mixing stage except for my arthritis while stirring in the flour and Reese’s cups.
They are very good. I like chewy cookies and these fit the bill.
