This recipe for Corn and Pearl Onions is almost “embarrassingly easy” but so tasty and delicious! Corn, cocktail onions, butter and Mrs. Dash seasoning makes this such a wonderful recipe. Corn and Pearl Onions takes less than 10 minutes to make and the corn casserole can be on the table! It’s that quick and easy. Hey, and it has only 4 ingredients. Yay!

I got this simple and easy recipe from Denise Johnson, a member of our Sunday school class when we were members at Hillcrest Baptist Church in Cedar Hill, Texas. I used to ask Denise to bring her delicious corn recipe to potlucks frequently and she always obliged us. Denise gave me this recipe reluctantly saying the recipe was “embarrassingly easy.” And she’s right. It is SO E-A-S-Y!!! It’s also SO D-E-L-I-C-I-O-U-S!!!
If you’re looking for a great tasting corn recipe with only a handful of ingredients that you can have ready to serve in less than 10 minutes, this recipe is for you! It’s gluten free, low calorie, healthy, and economical, too. You can easily make this a vegan recipe by substituting coconut oil for the butter in the recipe. Same fantastic results.
When I initially posted this recipe in January 2013, it was before I purchased my Canon camera so I was using an inferior iPhone camera to do the job. While the pictures were okay, the lighting was deplorable, so I decided to retake the pictures when I recently remade the recipe (April 2015). I took a meal to a young couple in our church after the birth of their first child. This recipe is still embarrassingly easy but as tasty as if you’ve spent much longer in the kitchen. Hope you enjoy it.
It’s hard to believe such a simple recipe as Corn and Pearl Onions can taste so wonderful, but this one does.
The cocktail onions and vinegar liquid they come in add such an amazing taste to the corn.
Corn and Pearl Onions is healthy, low calorie and gluten free. You can easily make this recipe vegan by substituting coconut oil for the butter in the recipe.
Here’s what I did.
These are the ingredients I used. Only 4!!!!!
Place frozen corn in an 8×12″ greased casserole dish. Dot with butter and sprinkle generously with Mrs. Dash seasoning. Microwave a few minutes on high.
Remove casserole from microwave. Rinse and drain cocktail onions (reserving the cocktail liquid). Add the cocktail onions and about 4 tablespoonfuls of the cocktail liquid. (Or more liquid as desired).
Microwave a few more minutes to heat through. Garnish with freshly snipped chives, if desired.
Corn and Pearl Onions is such a scrumptious recipe, and a great side dish for any main dish entree.

CORN AND PEARL ONIONS
(Recipe from Denise Johnson, Hillcrest Baptist Church, Cedar Hill, TX)
Corn and Pearl Onions
Equipment
- 1 2 quart casserole dish
- 1 microwave oven
- measuring spoons
- 1 wooden spoon
Ingredients
- 16 oz. pkg. frozen corn or more if desired
- 1 tbsp. unsalted butter
- 1 dash Mrs. Dash original or lemon pepper, as desired, or any variety
- 16 oz. jar Mezzetta cocktail onions in vinegar reserving some of the liquid vinegar
Instructions
- Place corn in a microwave safe dish.
- Add butter cut into pieces and spread over the corn.
- Heat in the microwave 5 minutes.
- Sprinkle with Mrs. Dash (any variety).
- I use original or lemon pepper; use as much as desired.
- Add cocktail onions with some of the reserved liquid vinegar. (I added 4 tbsp.)
- Heat again to desired temperature.

Corn and Pearl Onions is a great recipe to serve for holiday menus, too. It can prepared in a snap and uses the microwave instead of the oven, so it’s really convenient.
